How To Bake The Perfect Chocolate Chip Cookies

Chocolate chip cookies are the most basic and common cookies that you can find at any bakery shops yet only several of them really stand out. Mine did, so here I am to help you bring out the real 'thing' in your own chocolate chip cookie recipe.

1) Not all butter is the same. The best kind of butter that you want to use for your recipe would be the unsalted butter. In my case, I use the ones from Anchor, the brand of the butter.

2) Don't take too much time mixing the wet ingredients. The key to this is to first blend in the butter evenly, then mix the other ingredients with high speed.The faster, the better. This is to prevent any air that would enter the mix.

3) Remember to always preheat the oven first, about 20 minutes.

4) The temperature for any recipe can always be manipulated. Preferably, use mid-low temperature, for the dough to be cooked evenly.

5) Don't depend on the recipe itself on how long you should bake for a batch. You should determine this yourself by checking the cookies' colour. Up till now, I still don't know how long would it take to bake a batch of cookies using my secret recipe.

6) Always let the cookies cool. Can't stress this enough.

7) I presume all of you know that the darker the colour of the vanilla extract, the better, right?

8) Always sift the flour, you might not want those small unknown particles in your cookies and serve them to your guests/customers.

9) Let the dough aside for awhile after mixing everything altogether including the chocolate chip cookies. The result of this if the dough will turn firm and it will be much easier for you to arrange the balls of dough on the tray. Plus, it wouldn't turn out as much flat.

10) Remember to always mix the dry ingredients evenly, with your bare hands. Yes, you got that right.

11) How about salt? Never follow the recipe directly. Salt is not needed as much as baking cakes. A pinch will do the work, just to balance out the taste evenly.

• Set a timer for optimal baking.

Nurturing a relationship is similar to making a batch of cookies. First of all, we need to measure the ingredients accurately. Relationships need to be balanced. In a healthy relationship everyone is getting their needs met.

The Law of Love states that we need to love our neighbor as we love ourselves. Many people are good at one or the other. Brett R. Williams, author of You Can Be Right or You Can Be Married, says that women are often really good at loving others. Women are quick to put aside their own needs in order to make sure their children or husbands are getting their needs met.

Men on the other hand are good at meeting their own needs. Williams explains that both parties need to make sure their own needs are being met in the relationship in order to keep it balanced.

Like baking cookies, the needs of each person and the needs of the couple need to be blended together for a pleasant consistency. When placing cookies on the cookie sheet, you need to make sure they are even in size and not too close together. Likewise, each person's demands need to be about the same size and for practical reasons they need to be spread out a little.

For example, several weeks ago my husband took off to Boy Scout Camp for the week with our two sons. He had a great time snorkeling, hiking, and hanging out with the kids. I encouraged him to take time to do that because I knew he really wanted to and that he would really enjoy it. A few weeks from now I will take off with my girlfriends for a weekend of scrapbooking and girl-talk.

Giving each other personal time is one way to make sure our individual needs are met. However, each person needs to be responsible to inform their spouse about what they need. Our needs vary greatly as individuals and we cannot assume our partner knows what we need. Like setting a precise temperature on the oven or setting the timer for cooking, being clear about what you need as an individual and clearly articulating this to your partner will benefit your relationship. Case in point, my husband is an extrovert and loves to be with other people including me. I enjoy time with others, but find I need time by myself in order to really love others when I am with them.

It is important for us to find a balance in scheduling our days together so that we are both getting our needs met. On a typical Saturday, Brett will take care of the kids in the morning so that I can have time to exercise and meditate. Later in the day we make a point of doing many things together including errands, helping kids with homework and preparing meals. It takes time and practice to learn to bake the perfect batch of cookies. Balancing the needs of each individual in a relationship is not difficult, but it does take some time and attention, to develop the perfect recipe for your happiness.

Baking Perfect Breads, Cookies, and Desserts

We're all looking for that perfect pie, or cookies, or loaf of bread. It doesn't always happen. In our experience, there are four reasons that account for most of the less than perfect products.

Under baking or over baking. This has to be nemesis number one. Breads are often under-baked and cookies are often over-baked. Under baked bread is soggy. Crusty breads will never be crusty if the temperature doesn't get high enough to drive the moisture from the dough. Over baked cookies are dry and hard. Try baking cookies until they just start to brown and see if you don't like them better.

Cookie Bake

Most soft breads should reach an internal temperature of 190 degrees and most crusty breads should reach a temperature of 200 to 210 degrees. A thermometer is the bread baker's best friend.

To reach internal temperatures such as these, crusts will often be a darker brown than what you often picture in the perfect bread. If you would like a golden crust on your bread instead of a rich brown crust, try draping the loaf with aluminum foil for the last six or eight minutes of baking. The aluminum foil deflects the heat and will protect the crust from becoming too dark.

Not letting it rise enough. And while we're talking of breads . . . if you like your bread light and fluffy, let it rise. The tendency is to stick it in the oven too soon. With a little practice, you'll soon learn to recognize bread that has risen to the maximum. It's soft to the touch-it even looks puffy. Ideally, you'll catch it a little before it starts to blister. (Remember, you will get a little oven spring, even in a hot oven.) If you wait too long and the bread starts to blister, all is not lost. Punch it down, reform the loaf, and let it rise again. (Sometimes, if a single blister shows up and you're in a hurry, you can puncture the blister with a sharp knife and stick the loaf in the oven.)

Improper mixing. We don't mix breads long enough; we mix biscuits, muffins, and pancakes too long. Mixing develops the gluten. It's the gluten that creates the elasticity and chewiness in bread. We want products leavened with baking powder or baking soda to be tender and flaky. Mix the dry ingredients to distribute them well and then combine the dry mixture with the wet ingredients until they are evenly mixed but no more. Leavened products that are over-mixed are tough and leathery.

Improper measurement. We suspect that more often than not, ingredients are not measured properly. In many good recipes, there is some margin for error but even in the good recipes, the product will be better if the ratio of ingredients is correct. Measure liquids in clear containers designed for liquids and at eye level. Use measuring cups that you trust to be correct. (We recently compared four brand name measuring cups. One was off by a full tablespoon in one cup.)

We always weigh flour when we bake. A packed cup of flour can easily weigh 20% more than one that is lightly filled. (Most recipes are based on lightly filled cups.) If you are just starting to convert your recipes from volumes to weights, start out with 4.5 ounces of flour for every cup. Stay with the same flour as much as possible for the same type of product. Different flours have different densities and different flours can act very differently in a recipe. If you weigh your flour and record your results, you can perfect that favorite recipe.

Now you know. These are the nemeses that cause the most problems in the kitchen. Knowing what they are--the common pitfalls of the kitchen--will arm you to be a better baker. As you perfect your craft in these four areas, you will turn out wonderful baked goods.

Chocolate Cookies - Baking That Perfect Chocolate Cookie

The Perfect Chocolate Cookie

The best chocolate cookie is the cocoa drop cookie. Not only are they delicious, but they are easy to make as well.

The ingredients required for this recipe are: ¼ cup butter, softened; ¼ cup shortening; 1 cup sugar; 1 egg; ¾ cup buttermilk; 1 tsp vanilla; 1 ¼ cup sifted all-purpose flour; ½ tsp baking soda; ½ tsp salt; ½ cup cocoa powder, unsweetened; and 1 cup of chopped pecans.

First, cream the shortening and butter with sugar; beat in egg. Stir in the buttermilk and vanilla next, and then sift the dry ingredients together and add to the first mixture. Stir in the pecans, and chill the cookie dough for about an hour. Use a teaspoon to drop the dough onto a greased baking sheet, leaving about 2 inches between the cookies. Bake in a preheated 400°F oven for about 8-10 minutes, or until set. Then cool and frost with a simple chocolate or vanilla icing if desired.

Shortbread Cookie Recipe

Another great recipe is the chocolate covered shortbread cookie recipe. For this you will need: 8 ounces butter at room temperature; ½ cup powdered sugar; 2 cups all-purpose flour; ½ teaspoon baking powder; 2 ounces unsweetened chocolate, melted; and ½ teaspoon vanilla extract.

Combine all ingredients; knead with your hands to made sure they are well mixed, press into lightly buttered pans, and bake at 325°F for about 20 minutes. Cut into wedges while they are still warm or break them apart.

Cut Out Cookie Recipe Tips: How to Perfect the Holiday Sugar Cookie

Baking cut out cookies at Christmas is a time honored family tradition in many homes. Most of us have childhood memories of helping mom or grandma flour the counter tops, roll out the dough, and choose from an assortment of holiday shaped cookie cutters. It's true that sugar cookie cut outs are quite simple to make, with most recipes consisting of fewer than six ingredients. However, regardless of the particular recipe you choose, there are a few basic principles that should go into making any type of cut out cookie recipe. In this article, we'll discuss a few tips that will help you perfect the art of holiday sugar cookie cut outs.

First, follow your recipe to the letter. If it specifies butter at room temp, then make sure you soften your butter well in advance. If you forget, don't think you can simply zap it in the microwave for a minute to make up for forgetting to soften it on the counter.
