Baking The Sugar Cookies

When you look for some favorite treat other than the chocolate chip cookies then your right choice should be the homemade sugar cookies. These provide you much flexibility in terms of their decoration and are now one famous gift option as well.

The major ingredients of these cookies are sugar, flour, vanilla, eggs and butter. It is up to you to make use of baking powder or baking soda.

These can be fashioned if you roll them or simply your hands can be used for this and you can either sprinkle or frost these with sugar. It actually depends on the holiday event on which these are to be used. In USA these are often used at the special occasions.

As far as the details of this treat are concerned, the recipe named 'Nazareth Sugar Cookie' was developed by the settlers who were German Protestant and resided in Nazareth area in Pennsylvania in mid 1700s. As it is related to the history of the area very strongly therefore it became the area's official cookie in 2001.

The probable origin for these cookies was 'jumbles' which are usually found there in England and are3 unleavened. These cookies existed already in Middle Ages. Their key ingredients included nuts, flour, eggs and sugar as well as anise. These were the treats that shaped in rolls or the rings and for the flavoring purposes sometimes used caraway or vanilla instead of anise.

Sugar cookies that are homemade are amongst the treats that are most favorite ones in USA as well as around the globe. It has now become a tradition for these treats to be included in all the occasions. These include Valentine's Day, Christmas, Halloween and Easter.

If you are the one who has a passion of cooking or baking? If yes then you should definitely learn to bake these homemade cookies. These days it might not be so much easy because of the recipes that you may find online.

Another attraction of these cookies is that one can easily bake these cookies and fashion them as well. All you need to do is get started to decided which options fit your teammates and you correctly.

There decoration is easy also and you can design these according to the occasion. Doing that involves very little effort, as they can all be easily designed on my like a piece of canvas. This is something that everyone should try at least once.

How to Include Quinoa Seeds in Home Baking Recipes

There are many ways of including quinoa in your diet but one of the more unusual is to include it in baking. As far as I am aware this technique has been devised by me and I have never heard of anyone else using quinoa in this way. I stumbled upon it when looking for inspiration to spice up a simple cookie recipe I was about to make that had too much fat in it.

I wanted to reduce the fat content of this particular cookie recipe as I was trying to reduce fat in my diet at the time. The fat in the recipe was butter but I realized that quinoa seeds have oil in them so could be substituted for part of the butter.

The first thing to do is prepare the quinoa in the normal way using 1 part quinoa to 2 parts water. You bring it to the boils and simmer for about 15 minutes. You can cook it for less but for baking you need it to be quite soft to blend in with the other ingredients. The quinoa must absorb all the water as you do not want extra liquid in the mix. I there is remaining liquid turn the heat up to full and boil it off for a minute.

You reduce the butter content by half and slightly reduce the flour amount as well. you simple replace them with the same amount of prepared quinoa in the mix. The cooking time is the same as the normal recipe but you get a crunchier texture and taste to the cookies.

I have used this cooking method for cookies, biscuits and scones. It can take a little trial and error to get the proportions correct. It is a good way to reduce processed fats in recipes. The oil part of the quinoa works to replace the butter and the germ part replaces some of the flour. It is a bit of a balancing act but you will get it with practice

Pizzelle - Host A Cookie Baking Party Featuring Pizzelle This Holiday Season

Baking cookies is inevitably a part of almost any holiday, and naturally, any seasonal treat baking can be done with family and friends. Hosting a cookie making party a few weeks before the holidays is an excellent opportunity to get together with friends and family and get some yummy homemade seasonal treats. There are a lot of beautiful holiday treats that you can help make, ranging from familiar classics like iced chocolate cookies to international staples like Italian pizzelle.

Baking Italian Holiday Treats

Making up some Italian treats is an easy way to have several really wonderful looking desserts. Pizzelle is a classic Italian cookie that looks like a little waffle. The uncooked batter looks much like waffle batter but will usually also include flavoring oils such as orange or lemon. The batter is spooned on a pizzelle iron, which also embosses a design like a floral motif onto the cookie itself.

Pizzelle are often dusted with confectioners sugar while they are cooling, or spread with a nut or chocolate paste and eaten as sandwich cookies. Although there are only a few decorating ideas for these traditional cookies, they still are sought after at cookie parties because of their elegant appearance and the ease in preparing the batches.

Embellishing and Wrapping Your Gifts

Once your party has made all the snacks they want, you can continue the event by trading small batches of cookies with one another so everyone can sample the other batches. You can embellish paper gift bags by hand using scrapbook papers, bits of cute fabric, and paints, and can put together homemade gift tags to customize each bag.

Keep a roll of festive tinted cellophane on hand to wrap up the treats individually, then tie up each cellophane cookie with a pretty ribbon before putting it in a personalized gift bag. After the whole group has received their treats, if you wish you can continue decorating bags and use them as holiday gifts to bring back home and give to those on your gift list.

These are only a few ideas for organizing an entertaining baking party for the holiday season. You could host an even bigger event by inviting more guests and putting even more supplies and embellishing options on the table. In addition to just making pizzelle, you can include a few additional international treats as well as more popular basics such as snickerdoodles and oatmeal raisin cookies. You can also include multiple different icing flavors and recipes, ranging from bright glazes to rich cream cheese.

No matter which treats you incorporate at your baking party, you will definitely have an enjoyable afternoon with friends and family and end the party with holiday cookies that are pretty and taste excellent.

Remember, if you want to invest in a nonstick pizelle iron, then you definitely want to take a look at these pizzelle maker reviews for ones available for sale at a great price.

Pumpkin Baking Recipes

The smell of pumpkin baking always conjures up memories of Thanksgiving for me. The day always started early with mom bustling about the kitchen to prepare our feast. The Macy's Thanksgiving Day Parade would always be playing in the background as she'd prepare the meal. We'd stop to watch or listen to some of the marching bands and acts they had. But always, always, would we stop to watch Santa coming down the street on his sleigh. To this day, the smells of turkey, cranberry, potatoes, gravy, stuffing, and pumpkin all blending in a beautiful medley of smells brings a smile of memory to my face. Those special Thanksgiving feasts and that special time with mom are memories that last a lifetime. I hope you enjoy these fun and unique pumpkin recipes during this holiday season.

Baking Secrets For Sugar-Free Deserts

If you are used to baking with sugar, it may take a little getting used to stocking your pantry for a low-sugar or sugar-free lifestyle. Once you realize that your sweet life is not over just because you are cutting back on sugar, you will be just fine. Here are some tips to help you stock a pantry with baking supplies needed to make sugar-free desserts.

Sweetening the Pot without Sugar

The most obvious ingredient for baking sugar-free desserts is a substitute for sugar. There are a number of artificial sweeteners that are widely available, including aspartame (Equal), acesulfame-k (Sweet One), saccharin (Sweet 'n' Low) and sucralose (Splenda). They can be a little tricky to use in baking because they have different properties than sugar, but there are many sugar-free dessert recipes using each of them. Because each of them differs from the others in the way they react to heat and the amount of sweetening power they have, it is also important to use the artificial sweetener that is called for in the recipe. Aspartame, for instance, loses its sweetness in when it is subjected to high heat for long periods of time as it would be if you use it in cakes or cookies that are baked in the oven. Splenda, on the other hand, is stable in heat and can be used in baked recipes, but may need additional liquid.

In addition to artificial sweeteners, there are natural sweeteners that you can use for no-sugar-added desserts. These include long-established favorites such as honey, Stevia, molasses and corn syrup, but are not limited to the obvious sweeteners. Fruit juices can add sweetness and enhance flavors when used in place of water in recipes. Apple and grape juice are the sweetest, but not the only fruit juices that you can use to sweeten desserts. Try sweetening with pineapple or orange juice for a bit of tang, or pear juice for a light sweetness.

Keep a package or two of sugar free gelatin and pudding in the pantry as well. They make moist additions to cake and cookies, adding both flavor and color. Do not forget unsweetened chocolate squares, cocoa powder, and flavored extracts - the staples are vanilla, almond, rum, butter and peppermint.

Adding a Little Spice to Dessert

When your senses are not overcome with sugar, you will find that a little spiciness goes a long way. Cinnamon, nutmeg, allspice and ginger are the so-called "sweet spices". They will bring out the sweetness in smaller amounts of sugar or other sweeteners and are especially flavorful when used with fruit juice or puree.

Savory spices can also add an unexpected flair to dessert. Do not be afraid to experiment a little. Chili adds an unexpected bite to strawberries, for instance, and herbs like peppermint, lavender and rosemary do a wonderful job of enhancing the flavor of ice cream and fruit sorbets.

Sugar Does More than Make Things Sweet

Keep in mind that sugar provides more than just sweetness in a lot of recipes. It can be the reason that cakes and cookies brown when they bake, aid rising and provide moisture and texture. That is why a favorite pantry staple for sugar-free cooking is baby food - pureed bananas, pears, plums or applesauce - just about any kind of baby food fruit puree will do. It will add both sweetening and moisture to cakes, muffins, breads and cupcakes along with extra nutrition.

Flaked coconut is another pantry staple that will do double duty in your sugar-free pantry. It adds sweetness and flavor to cakes and cookies, and browns nicely when sprinkled on baked goods and run under the broiler.

A jar or two of sugar free fruit spread are handy to keep in the pantry. They can be stirred into plain yogurt for a quick snack or easy dessert, or spread on pound cake instead of frosting to add flavor and extra sweetness.

Peanut butter is another staple that should be in every sugar-free pantry. It will add flavor to muffins, cookies or cakes, as well as substituting for part of the fat. Thinned with a few tablespoons of milk and stirred over low heat, it makes a quick dessert topping or sauce, and pairs very well with chocolate or bananas. Be sure to read the label carefully, since a lot of peanut butters have a surprising amount of sugar in them.

The more you cook without sugar, the easier it will be to create tasty, healthy desserts. As your taste buds - and those of your family - adjust to less sugar, you will find that other flavors come more and more to the fore. It will not be long at all before you find that you prefer desserts that are fresher and lower in sugar because they naturally taste better.

Chewy Vs Crunchy - Cookie Baking Tips

Cookies are a fun treat that can be made for any occasion of even just for fun. There are literally millions of recipes for cookies and different designs too.

When giving away cookies as gifts, you should consider the following three factors:
One: The theme of the party or the occasion
Two: The flavor of the cookies
Three: The texture of the cookies: chewy or crunchy or in between.

Professional bakers are skilled at creating cookies in various textures, including chewy, semi-chewy and crunchy. However, most folks that try to bake their own cookies at home don't know how to do this. What should be done to make a cookie crunchy, chewy or in between? Well, difficult as it may sound, the secret is in the sugar. Here are some simple cookie baking tips:

Cookies are laden with butter, shortenings and sweetener. The first thing to do is to look at the recipe and see the measurements of the sugar and then note what kind of sweetener is used. There should be two kinds: brown sugar and white sugar. It is in the type of sugar used that will totally transform the texture of the cookies.

Crunchy cookies will need white sweetener and hardly any brown sweetener. So if the cookie recipe is say, chocolate chip cookies, and the sugars used are both brown and white, to achieve the crunchy effect simply put in more of the white sugar than the brown, or simply eliminate the brown and use all white. Example: if the recipe calls for 2 cups white sugar and 1 cup brown sugar, to get the full crunchy effect use 2 cups white sugar plus 3/4 white sugars.

Semi crunchy cookies or semi-chewy cookies will again need a variation of the two sugar measurements. Again, if the original recipe calls for 2 cups white sugar and 1 cup brown sugar make it 1 1/2 cups white and 2 cups brown. This will make the cookies not too crunchy and not too chewy - it will be just right!

For chewy cookies, another variation of the measurements between the two sugars will have to be done. If the original is again 2 cups white sugar and 1 cup brown sugar make it 4 1/2 cups brown sugar. This will give the cookies the chewy effect that is so great with chocolate chip cookies.

Now, for a bonus: there are people who like their cookies gooey chewy. This is not impossible to achieve. Again for the 2 cups white sugar and 1 cup brown sugar original recipe, convert the measurements to 4 cups brown sugar and 1/2 molasses or honey. This will give the cookies a super gooey chewy effect.

Now for those who are curious why the sugars are considered the key, well it may take a lot of explanations but to simplify the process, it is the brown sugar that makes the cookies chewy. Also, the same thing can be done with cakes. More brown sugar will make the cake moister.

Baking With Agave Nectar - Chocolate Chip Cookies

Baking with agave nectar (instead of granulated sugar) is as easy as pie, if you adjust to a few simple facts.

Agave is 1.4 times sweeter than sugar
It adds additional liquid to the recipe
It browns quicker than a recipe with sugar
It also makes the batter a bit stickierLet's look at a standard chocolate chip cookie recipe and see what we need to change if we want to bake it with our natural sweetener.

3/4 cup sugar
3/4 cup packed brown sugar
2 sticks (1 cup) butter, softened
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup chopped pecans or walnuts (optional)

First, we want to replace the 1 1/2 cups of refined sugar, of course. I recommend using 1 cup (it's sweeter than sugar, remember?) of amber agave to compensate a little for the loss of the brown sugar flavor.

Secondly, we need to re-thicken the batter because of the extra liquid from the agave syrup. So, let's increase the flour to 2 1/2 cups.

Next, turn down the oven temperature by 25 degrees. Cookies are normally baked at 375 degrees F, but since agave sweetened baked goods brown faster, we want to bake them in a slightly "slower" oven.

And finally, make sure your cookie pans are lined with parchment paper and sprayed well.

Chocolate Chip Cookie Recipe With Agave Nectar

1 cup amber agave nectar
2 sticks butter, softened
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup chopped pecans or walnuts (optional)

I'm sure you know the procedure for mixing a cookie dough, but just in case...

1. Beat the agave, butter, eggs and vanilla by hand or in an electric mixer until creamy and fluffy.

2. Sift together the flour, soda, and salt, and blend it thoroughly with the creamed mix.

3. Fold the chocolate chips and optional nuts into the batter.

4. Bake it off at whatever size you like. (I prefer 8-inch cookies. But, I'm a glutton!) Check your oven after 8 minutes or so. It shouldn't take much longer than 8-10 minutes.

Note: Baking cookies with agave nectar will result in a softer, moister end product.

One last tip: If you want to avoid all white sugar in your diet, use unsweetened or malt-sweetened chocolate chips!

Important Rules in Baking Cookies Perfectly

Baking cookies is easy but somehow difficult. You have to be very careful in each step in order to get the perfect result. A simple mistake could ruin all the processes you have done. As the consequences, your cookies will be as hard as rocks or as black as coal. Therefore, pay attention to these certain rules when you are going to make perfectly baked cookies for your family.

Mostly, cookies are made from similar basic ingredients. They have the dry ingredients such as flour, baking powder, baking soda, salt, and sugar or brown sugar as the sweeteners. Besides, they are also consisting of fat such as softened butter or margarine, eggs, vanilla, and sometimes shortening. For the flavors, mostly people add chocolate. Cocoa, nuts, raisins, oatmeal, spices, or extracts to their cookies.

To have perfect texture, taste and appearance, you need to be more careful than just following the explained steps in the recipes. You should really understand about the process, the techniques, the tools, and the ingredients so you can make cookies just like what you expected to be. They are:

1. Identify the characteristics and the nature of each ingredient such as flour, eggs, fats, oils sweeteners and even the decorating materials such as marzipan or fondant. Each of them has certain influence in giving texture, appearance, and taste for your cookies.

2. Measure the ingredients accurately by using the right tools and techniques.

3. Do not over-mix the dough because it is persuading gluten development. This kind of dough makes your cookies hard or even unable to eat.

4. Do not over-bake to prevent it burned. You should check the temperature and the baking time carefully.

5. Bake your cookies with passion. This is a simple aspect that gives great and useful influences.

Following those rules will be very helpful in making perfect. However, the very basic rule in making cookies is: practice makes perfect. Learning from the mistakes in each baking process surely will help you a lot in making perfect cookies for your family and friends.

When Baking Molds Become Essential in Creating Your Ideal Cakes

Cakes come in different types, themes, shapes and sizes. For you to be able to create a perfect one, you have to be able to have access of a few essential supplies like the baking molds and pans in your kitchen. If you are starting out your hobby of baking, then there is still a practical way of buying these essential baking pans and molds without hurting your budget.

Here is what baking experts suggest that you need to stock up in your kitchen if you want to do some baking like the pros do. For those with a limited budget, a beginning baker can start out with just the standard cake pans of different sizes and just a few sheet pans. One can do without the molds for the time being and special shapes of cakes can be achieved by simple cuttings done on the original shapes of cakes. Thus, if you want to have a specially shaped cake, then you can simply do some nice cuttings of the basic rectangular or round cake and create a cake with spectacular shape.

For instance, square cakes can be easily done from basic rectangular cakes by simply cutting them in half. There are also other shapes that can be created from the basic rectangular cakes. On the other hand, you can create a special half-moon cake from a basic round cake. This simple technique can be used when making your bunny cakes for your Easter celebration. This technique is done by cutting the round cake in two. The halved cake is stood on the flat edge to create the half moon shape. The stiff frosting or icing is used to fuse them together. Once the cake is firm and adhered to the cake plate with just the right amount of icing underneath the cake layers, the cakes goes through the final phase frosting. Finally, you can add some final touches to get the decorative enhancements that you want to have in your cake.

When investing on your bakeware, it is important that you buy the cake pans and sheets that are of highest quality. The non-stick cake pans need to be greased either by spraying or the normal greasing method. The stainless type of pans must be floured and sprayed with grease as well. You will need to have a higher level of skill in removing your cakes from this type of pans than in any other types of cake pans. However, the stainless pans are preferred by many because of its durability and for the fine and smooth finish of cakes baked on stainless steel cake pans.

Whether you are baking a cake intended for a big event or just a simple side dessert for your weekend family gathering, the use of the appropriate cake pans and molds are the basic essentials that will ensure that you get a perfectly baked cake. There are also some practical tips that you can consider in order to bake your cake just like the experts do.

While you are learning your way through with own baking activity, don't fail to preheat the oven at the prescribed temperature and follow exactly the detailed baking procedures. While these are simple and basic cooking guidelines, its effect on your baking is significant.

Chuck R. Stewart's wife recently purchased specialty baking molds and specialty baking pans online for their daughter's birthday party.

Home Baking Business Equipment

My mission in this article is to give you a feel for the kind of equipment that's usually required by the health department and equipment that's traditionally used in a personal kitchen but can also be used to get your business started. I've also included a few helpful tips that can make your work a little easier, less time consuming and more profitable.

Here's your first money-saving tip: used commercial equipment will more than satisfy your needs. Commercial equipment tends to have a long operating life when it's taken care of properly.

The following equipment list will be especially helpful if you're operating on a shoestring budget. It will also be useful if you are uncertain about operating this type of business and want to test the waters.

Ovens - The health department has no requirements concerning the size, type, or make of oven used in your business. You can use the same type of conventional stove that you have in your personal kitchen if it bakes properly and produces the results you need. But you should be aware that conventional ovens limit the quantity you can bake at one time and the speed of baking.

To increase production and keep up with demand, you'll need a commercial oven, preferably convection. Convection ovens bake fast and efficiently. Before purchasing a commercial electric oven, inquire about wiring and outlets needed for operation. Before purchasing any type of gas oven, make sure you have enough space for a hood fan and proper ventilation.

Mixers - If you have budget concerns, a home-style stand mixer will work perfectly to get you started. I recommend KitchenAid mixers. If you have product demand and the budget, definitely invest in a commercial mixer. A used twelve or twenty-quart commercial mixer will get you off to a great start.

Refrigerators/Coolers - Are you watching the budget? If so, here's another tip that will save you many dollars. Home-style refrigerators will work perfectly for your start-up and established business. Commercial refrigerators (referred to as coolers) can be expensive, even the used ones. So consider carefully the amount of space you have, the amount of product to be chilled, and your budget for refrigeration. Before purchasing a commercial cooler, inquire about the necessary electrical wiring and outlets needed for operation.

Proofing Cabinets - If you're making large quantities of yeast breads, you will benefit from having a proofing cabinet. This cabinet maintains a warm temperature that's perfect for the stage of bread making when the dough needs to rise and double in bulk.

Work Sinks - A stainless-steel compartment sink is usually a requirement of the health department. Even if this type of sink is not required, you should consider buying one. The convenience and ease of washing large sheet pans, large mixing bowls, and other oversized pieces make it well worth the cost.

Work Tables - The health department usually requires a certain kind of work surface for food preparation and protection. Stainless-steel tables are the most popular because they can be easily cleaned and do not absorb germs and other contaminants. There may be other tabletop surfaces that meet approval. Ask your health department for more information. The size table you buy should be determined by available space and the task to be performed. Rolling Pan Racks (Shelves) These heavy-duty metal racks are made to hold both half- and full-size sheet pans. They vary in height and the number of pans they hold. They are excellent space savers. Use them for cookies and cakes (before and after baking), ingredients, supplies, and more. One of the great convenience features is mobility. They can be moved to wherever you're working. A pan rack is not required by the health department, but it should be near the top of your list of necessities. Used racks will work perfectly.

Storage Shelves - You'll need lots of storage space for dry ingredients, packaging supplies, and other items. It's always a great idea to make the most of your work space from floor to ceiling.

Hand Sink - A hand sink is generally a small sink used to wash your hands before and during work. This sink is usually required by the health department. You can save on cost by purchasing a fiberglass sink (called a utility sink) at most building supply stores.

Ingredient Bins - It's not necessary to buy commercial storage bins for items like flour and sugar. Just go to a building supply store and purchase large thirty-two-gallon trash cans with lids. They must be new, of course. These cans will store a fifty-pound bag of flour or sugar and more. Do not empty the product directly into the trash can. Instead, drop the unopened bag into the can, and then open the top of the bag and dip out the product as needed.

More Tips: Before purchasing any large equipment, measure all doorways that the equipment has to pass through before it can be placed in the work area.

Always ask for a warranty. Most companies offer at least a thirty-day warranty on used equipment.

Hot Trends in Baking and Pastry

Of all the hot trends in baking and pastry, outlandish decorating is one of the most noticeable and long lasting. It used to be that piping some flowers, swirls and other simple accents onto the top and sides of a cake was enough to impress people. But, nowadays, it can take pyrotechnics and motorized installations to impress judges in cake decorating contests, and at the very least, it takes more than mere piping to make a truly grand cake. The world of bakers and pastry chefs has gone to a whole other level of artisanship.

Here are some other trends taking the baking and pastry world by storm:

• Bright and Vivid Colors
Tasteful cakes and pastries in austere shades of brown, cream, off-white and pale pink are no longer so fashionable. Now, bold colors, such as lemony yellow, lime green, shocking pink, sky blue and tantalizing turquoise, are taking the pastry world by storm. Whether it's a birthday cupcake or a wedding cake, go big and go bold when it comes to color.

• Candy Art
Cake decorators and pastry artisans are relying on gum paste and sugar-styled art more and more these days. These edible products can be crafted into animals, buildings, flowers, people, ribbons and other realistic, three-dimensional images.

• Cupcakes
The cupcake is nothing new. People have been making and enjoying cupcakes for generations, but this tiny treat has become one of the hugest fads in the baking and pastry world in the 21st century. These tiny cakes aren't just frosted and given out to kids at birthday parties anymore; people use fancifully decorated cupcakes as the main dessert at cocktail or dinner parties, and they can even be stacked up in a spiral shape to replace a traditional wedding cake.

• Tea Parties
People have gone crazy about tea parties, from the fancy clothes to the fine china. Restaurants and cafés are even hosting their own fancy tea parties, complete with fancy cakes and pastries. One of the best parts about hosting a tea party is choosing the delicately decorated cakes and pastries, such as cupcakes, cookies and bars. Some shops even offer special goods just for the tea party crowd.

All the hot trends in baking and pastry at the moment have something in common: creativity. So whether you're a home baker or a professional pastry chef, don't hold back! Get creative and use the boldest colors, designs, ideas and techniques.

Bread Baking Made Easy!

Don't you just hate it when you follow a recipe to the letter and when the bread baking is finished the bread not only looks nothing like the recipe book's picture, but tastes terrible as well?

There is no denying that bread baking as with baking anything is a delicate process.

Bread baking involves so many things that first time bakers are often discouraged after a few failed attempts to turn out professional looking and tasting loaves.

Little do they realize that if they only possessed the professional Baker's secrets bread baking would be so easy that the bread would practically make itself!

For instance: How many amateur bakers know the secret to keeping bread from sticking to the pan every time?

None! So when they try their hand at bread baking for the first time their bread sticks to the bread pan, and ends up a crumbled mess if they try to force it out.

Then they cry and give up thinking that the problem lies with them.

The shocking truth is that it doesn't!

The problem lies with their lack of knowledge of THE baker's bread
baking secret.

The secret professional chefs and bakers won't tell you, the secret they guard so jealously.

My father happened to learn this bread baking secret in his younger baking days and has passed it on to his children ever since.

Okay, okay, I know you're probably screaming at me by now ''Beth, get on with it! Tell us the bread baking secret already!''

So here it is; You will need only one tool besides for the oil and bread pan you already have, and that is quite simply CORNMEAL (you shouldn't need more than 1/4 to 1/2 cup for two loaves of bread).

''Cornmeal?'' you ask doubtfully. ''YES, cornmeal!''

No, you do not add the cornmeal to the bread ingredients! That is not the bread baking secret.

What you do is you oil your pan as usual, and you lightly sprinkle cornmeal on all of the sides and bottom of the bread pan.

Now you can safely place your bread dough into the pans without fear of it sticking to them.

While your bread is baking instead of sticking to the pan, your bread will stick to the cornmeal and slide easily out of the pan when done baking.

You may need to use a butter knife and slide it in between the pan and the bread before turning the pan over and allowing your bread to pop out.

A lot of the time this will be unnecessary however and your bread will pop out just by your turning the bread pan upside down.

You will probably also want to use the butter knife to scrape the excess cornmeal off the bottom and sides of the bread as you may not care for the taste of cornmeal.

This bread baking secret will work whether you're baking a batter bread or a rising bread (also called yeast bread). I personally use it for both.

Here is another treasured bread baking secret, this one only for batter breads:

On the last ten minutes of its baking time cover the bread pan containing the batter bread with another bread pan (a steel bread pan works best), and leave it on until the bread is finished baking.

This will keep the batter bread from burning or becoming too hard on top. You may vary the time you leave the steel bread pan on according to how your batter bread usually looks when it is finished.

If it is a very dark brown on top and difficult to slice because the top is so hard, then 20 minutes will work best. But if it is just a little too hard on top and a little too brown the 10 minutes should suffice.

Do not cover the bread at all if it usually comes out golden and soft on top after the baking is completed.

You may also glaze a batter bread on top with a tablespoon of melted butter mixed with a tablespoon of honey, and sprinkle some flaked coconut or sliced nuts on top of that.

To glaze you start by taking the bread out of the oven five minutes before the required baking time is finished, then spread the butter/honey mixture on top of the bread, sprinkle on your coconut or chopped nuts and bake for the remaining 5 minutes.

Here is another useful bread baking tip for rising breads...

If your bread loaves over rise (say because you were busy and forgot about them), then you can use a pair of scissors to cut off the excess sides, being careful not to cut any dough from off of the top.

You may then use this excess dough to make rolls. You simply oil a pizza or cookie sheet and form the dough into several small balls.

Rise them for another half hour and then bake on 350 degrees Fahrenheit for 15 to 20 minutes or until golden brown.

Do yourself a favor and put these tried and tested bread baking secrets immediately to use in your kitchen, and your family will rave over the results.

Make Quickly Cash - Baking Getaway Cookies

Is there a collage in your town, or possibly in a town close to you? If there is than you are in the best location to make cash effortless and quick. How several of these collage youngsters do you assume are homesick? I keep in mind my school nights how much I missed residence. All-around the getaways just before winter break had been the worse nights that I had. I would just sit close to, and feel about all the issues that I was lacking for the initial time in my lifestyle. A single of the biggest items was the baking of the holiday cookies, I know of all the points to miss that was sort of odd but it was a tradition.
My second 12 months of school, I knew that the vacations ended up looming and so was the depression, this yr I was going to do a thing about it. I figured if I was lacking residence the other little ones were as well. I went to the president of the university, right after a good deal of begging and guarantees I was granted permission to use the kitchen area one particular evening. I hung fliers all over the place. On them, I place for just ten bucks, come make cookies with pals and take residence a dozen. I was so shocked when one thousand youngsters wondered in the kitchen that evening.
Let's do some math out of the ten dollars I charged two money went in the direction of the baking supplies. I left that kitchen the up coming morning with a warm coronary heart and 8000 bucks in hand. What is stopping you?
Did you ever wonder why flour tastes like sawdust but a French or Italian bread made with that very same flour and tiny else has a pleasant, fairly sweet taste?
Bread wouldn't be bread with out yeast and yeast can't do the job without sugars. Yeast is alive-residing organisms-and dwelling organisms require foods for fuel, in this case, straightforward sugars. But flour is mostly starch and table glucose (sucrose) is far too complicated for the yeast before fermentation. Amylase and invertase, enzymes current in the flour or produced by the yeast, bust down the starch molecules into sugars. Some of these easy sugar molecules turn out to be meals for the yeast; other individuals create the sweet taste we locate in a very good bread-even a French bread exactly where there is no sugar extra.
As theyeast feeds on the sugar, it produces two digestive byproducts-alcohol (ethanol) and carbon dioxide. The carbon dioxide is what leavens the bread-carbon dioxide gases filter by means of the dough making loft. The alcohol is evaporated in baking.
The biological and chemical actions taking area as the bread ages and rises are named fermentation. Normally, a prolonged, sluggish fermentation can make for far better flavour, texture, and moisture retention. Several very good breads call for "retarding" or slowing lower the growth of the yeast with refrigeration. If dough is refrigerated, the yeast grows far more slowly and gradually. Fermentation nevertheless requires spot as the amylase enzymes operate inside the dough and glucose is introduced albeit at a slower rate. When the dough is warmed and the advancement of the yeast will take off, there is plenty of sugar found for the yeast and an extra of glucose to sweeten the bread.
When yeast grows a lot more gradually, we discover the richer, fuller flavoring of breads made with retarded dough. In the earlier article, we mentioned a focaccia that employs refrigeration to slow along the advancement of the yeast and generate the desired crumb and flavor. Is it a excellent bread with out retarding? Yes, but retarding does give it desirable taste overtones and a a lot more open crumb.
This write-up was taken from baking supplies: Components and How They Do the job and is available totally free for download.

American Baking

The smell of fresh pastry dough being rolled out swirls of frosted sugar, the heady aroma of baking apples, the spicy hints of cinnamon and nutmeg wafting from the oven…American baking is a foodie's delight with its wide variety of tastes, textures, and flavors. Christmas cookies, Valentine's tarts, Thanksgiving pies, birthday cakes, family favorites…..the list is endless. Delicious swirls of whipped cream, tart fresh fruit filling, the glimmer of chocolate glaze and the taste of powdered sugar off the first bite of a doughnut...it's enough to make even the fullest person sit up and ask for more!

Christmas is not just about Santa, the Christmas tree or the holly and mistletoe. Christmas is about food, and it's one of the most important holidays in American baking.  Christmas cookies drizzled with icing and sugar; Yule logs brought over by the French which consist of soft melt-in-the-mouth chocolate sponge cake liberally interspersed with candied cranberries and whipped cream; the Italian version of the Christmas cake, the pan forte, replete with fruits and spices; the Austrian Linzer Torte with its ruby red preserves peeking through its golden lattice crust… the list goes on.

Then there are Easter recipes beginning with the quintessential hot cross buns flavored with a unique blend of cinnamon, raisins, nutmeg and currants. There are special Easter cookies and Easter macaroon tarts, there are Easter carrot cupcakes and the average American kitchen is warm with the delicious smells of American baking. Halloween which is the American way of celebrating the darker forces in Nature, all that is Gothic and noir, is incomplete without its explosion of sweet delights like the pumpkin cookies and little ghosts made of light flaky meringue. And of course no Thanksgiving is complete without flaky apple pie, gooey pecan pie, pumpkin cheesecake and pumpkin bread.

There are some recipes that are so typical of American baking, like the chocolate chip cookie. No American home is complete without a cookie jar full of these treats. There's a history to this recipe. It's said that this recipe, that is so very popular across the world today, was discovered by happenstance. A Mrs. Ruth Wakefield, who ran the Toll House Inn in Massachusetts, was at a loss as to what she could add to her cookie dough, as she was flat out of currants and raisins. The only thing handy was a Nestle chocolate bar, which she chopped into chunks and dropped into her butter cookie dough. And voila…the chocolate chip cookie was born. It became a huge hit with her customers and in 1939 Nestle bought the rights to her recipe and named their first batches of chocolate cookies 'Famous Toll House Cookies'. Another typically American baking recipe is the peanut butter cookie. It came into the American baking lexicon in the 1940s.

Angel food cake is another such recipe: it is so named because its airy, fluffy lightness was deemed food fit for the angels. But a large number of eggs went into this feather light cake. In fact Mrs. J.Chadwick in her 1953 "Home Cookery" book specified 32 egg yolks were needed for one single cake. Another famous cookbook Mrs. Horace Mann's 'Christianity in the Kitchen' wrote that 20 eggs were needed with around 3 hours of beating required!

There are so many vignettes behind each recipe, every home has their own special zealously guarded ingredient for their cakes, there are variations, different permutations and combinations, and elements added from other nations, elements assimilated sand Americanized. But the bottom line is….American Baking is a foodie's paradise.

Great Tips For Baking Cookies

Here are some great tips that will make baking cookies easier and the results even better.

* For light and crispy cookies use an electric mixer. Mix the dough by hand if you prefer denser cookies.

Cookie Bake

* Do not over mix the dough. This is supervene in hard cookies.

* If a formula calls for butter, you can substitute with either margarine or shortening.

* Although cookies made from butter or margarine are flatter than those made with shortening, they have a great rich flavor. To get the best of both worlds, use half of each instead.

* If you plan on using a nonstick baking pan, lower the recommended oven temperature by 25 degrees. This will prevent the bottoms from getting too brown.

* For easy cleanup if you are not using a nonstick pan you can use parchment paper instead.

* When baking several batches of cookies, make sure you have more than one baking sheet. If you place dough on a hot or warm sheet it will spread right away and you will end up with flat cookies.

* always bake in the middle of the oven. Your cookie sheet should be small enough that oven heat can as a matter of fact surround it. A good rule is to have at least 2 inches of space on all sides.

* Do not place two baking sheets in the oven at the same time. Some will over cook and some will end up under cooked.

* Spacing the cookies at least one and a half to two inches apart, including the edge of the pan, will help make sure even cooking all around.

* An easy and great tool to use for drop cookies is an ice cream scoop. It will make your job easier and all your cookies will be the same size.

These are tips I have picked up from all over and many people. They work for me and I hope they will help you bake yummy cookies too.

The different Ways of Baking Cookies

'Cookie' word comes from the Dutch word 'koejke' meaning a small cake. Cookies were initially made just to test the climatic characteristic of the oven. The cooks in the past use to just put a puny prepared cake dough into the oven to test whether the oven had heated enough to bake the cakes or not. Unknowingly they discovered the cookies and that is how cookies started being made for selling purposes and was welcomed warmly by all. Therefore, initially there was no definite method to make cookies but now-a-days lot many kinds of cookies are ready in the store and they all are made of unique recipes.

However, cookies markets have been prosperous then onwards and have started being made with intentions of making it. There are various ways in which cookies are baked these days as per the selection and taste of the maker. One way of baking cookies is to dropping the cake dough with table spoon on the cookie sheets. This is a classic way to bake cookies and commonly cookies would be of round shape only with this method. Secondly by molding the cookie dough with hand any sorts of shapes can be made by this method. This method is specially used for oatmeal cookie as it cannot be dropped on the cookie sheet with the spoon. Third method is the one in which you can roll the dough after chilling it for some time so that it can be handled. Other most beloved method is baking cookie bars. This simply requires cookie dough to be spread in the tray and then it is chopped into bars after baking and cooling it.

Cookie Bake

However, no matter which method is used to bake cookies it is its taste and maybe it is the love and caring attentiveness that is obvious in cookies. Home, love, and cookies seem to go together.

Fun Cookie Baking Ideas

If you or your house are bored with eating the same cookies why not try something a small different? Say goodbye to your Oatmeal and raisin or Chocolate Chip, not that I could ever give up the latter completely, and be a bit more inventive.

I am however, open to all suggestions and am willing to experiment with distinct flavors. If you don't try you never know, that's my motto in the kitchen.

Cookie Bake

There are a few new cookies which I've tried lately, and I'm so glad that I did. Here are a few of the ones I made that were really tasty and will right on be on my list from now on when baking day comes around.

The first new way I tried was to make my cookies from a cake mixture. They are really tasty, and you even get the authentic cracks in the cookies. The charm of this is the range of flavors you can buy a cake mix in.

The next one I tried was using dough made from peanut butter. You can make this yourself or buy it ready made. When you take the cookies from the oven originate a space inside each cookie and pop in a peanut butter cup, get the picture?

If you prefer your chocolate to be white rather than brown, then a great blend for cookies is white chocolate with cranberry. The two flavors blend together within the cookie to originate a taste sensation. These have proved to be very favorite and I'm being asked now to make them for people.

My last suggestion for today is to get your cookie dough and throw in some butter toffee, chocolate chips and cherry. Very sweet and delicious, these will soon become a firm favorite in your household.

The great thing about baking cookies is that there are no rules. You may have some great ideas yourself, don't keep them as ideas, give them a go. Try some of my ideas with some of your own, you should enjoy both production and eating cookies.
