RECIPE #1: "Marble Chocolate Lover No Bake Cookies"

Ingredients: (makes approximately 2 to 3 dozen cookies)

- 250g milk (or dark, if you prefer) chocolate

- 250g white chocolate

- 2 1/2 cups of rice puff cereal

- 1/2 cup of desiccated coconut

Method:

1. Melt both chocolates in separate bowls (either melt over a "bain marie" or double boiler, or microwave for approximately 30 seconds) until soft and smooth.

2. Mix coconut and rice puffs together in a bowl. Pour the dark chocolate over and mix thoroughly.

3. Line a shallow baking dish and pour mixture evenly.

4. Pour the white chocolate around the mixture. With a large spoon, gently and roughly mix the white chocolate into the mixture to create a desired marble effect. (Try not stir and mix the colors in too much).

5. Refrigerate to harden for 1 hour or about 10 minutes in the freezer. Cut into square sizes as you desire. (Store in air-tight container in cool temperatures. Refrigerate for warmer climates).

RECIPE #2: "Classic Jam Drop No Bake Cookies"

Ingredients: (makes approximately 2 to 3 dozen cookies)

- 2 1/2 cups of wholemeal cereal, lightly crushed (or 2 cups of oatmeal if preferred)

- 2 tablespoons of honey

- 1 cup of softened butter

- 1/2 cup of icing sugar

- Strawberry (or any fruit) jam

Method:

1. Mix butter, icing sugar and honey together until smooth.

2. Stir in the cereal carefully and thoroughly.

3. Place a large waxed paper on a flat baking dish and spoon the mixture on to the paper in small serving amounts. Lightly pat the small mounds down.

4. Add a small (about half to one teaspoon) of your favorite fruit jam in the centre of the cookies.

5. Refrigerate for at least 30 minutes or about 10 minutes in the freezer before serving. (Store in air-tight container in the fridge).

RECIPE #3: "Almond Delight No Bake Cookies"

Ingredients: (makes approximately 1 to 2 dozen cookies)

- 2 1/2 cups of rice puff cereal (can be honey glazed styles)

- 100g roasted almonds (finely chopped) or almond flakes

- 100g milled almonds (or almond powder)

- 1/2 cup of softened butter

- 1 table spoon of honey

- vanilla essence

Method:

1. Mix butter, milled almonds, honey and a couple drops of vanilla essence together until smooth.

2. Mix rice puff and roasted almonds together and pour into the butter mixture. Mix thoroughly.

3. Spoon mounds onto waxed paper and refrigerate at least 30 minutes or about 10 minutes in the freezer before serving. (Store in air-tight container in the fridge).

TIP: Any cereal mix can be replaced by graham cracker crumbs or oatmeal if preferred to suit your diet.

Baking exquisite Breads, Cookies, and Desserts

We're all looking for that excellent pie, or cookies, or loaf of bread. It doesn't always happen. In our experience, there are four reasons that inventory for most of the less than excellent products.

Under baking or over baking. This has to be nemesis number one. Breads are often under-baked and cookies are often over-baked. Under baked bread is soggy. Crusty breads will never be crusty if the temperature doesn't get high enough to drive the moisture from the dough. Over baked cookies are dry and hard. Try baking cookies until they just start to brown and see if you don't like them better.

Cookie Bake

Most soft breads should reach an internal temperature of 190 degrees and most crusty breads should reach a temperature of 200 to 210 degrees. A thermometer is the bread baker's best friend.

To reach internal temperatures such as these, crusts will often be a darker brown than what you often photo in the excellent bread. If you would like a golden crust on your bread instead of a rich brown crust, try draping the loaf with aluminum foil for the last six or eight minutes of baking. The aluminum foil deflects the heat and will safe the crust from becoming too dark.

Not letting it rise enough. And while we're talking of breads . . . If you like your bread light and fluffy, let it rise. The tendency is to stick it in the oven too soon. With a petite practice, you'll soon learn to identify bread that has risen to the maximum. It's soft to the touch-it even looks puffy. Ideally, you'll catch it a petite before it starts to blister. (Remember, you will get a petite oven spring, even in a hot oven.) If you wait too long and the bread starts to blister, all is not lost. Punch it down, reform the loaf, and let it rise again. (Sometimes, if a single blister shows up and you're in a hurry, you can puncture the blister with a sharp knife and stick the loaf in the oven.)

Improper mixing. We don't mix breads long enough; we mix biscuits, muffins, and pancakes too long. Mixing develops the gluten. It's the gluten that creates the elasticity and chewiness in bread. We want products leavened with baking powder or baking soda to be tender and flaky. Mix the dry ingredients to distribute them well and then consolidate the dry combination with the wet ingredients until they are evenly mixed but no more. Leavened products that are over-mixed are tough and leathery.

Improper measurement. We presuppose that more often than not, ingredients are not measured properly. In many good recipes, there is some margin for error but even in the good recipes, the goods will be better if the ratio of ingredients is correct. quantum liquids in clear containers designed for liquids and at eye level. Use measuring cups that you trust to be correct. (We recently compared four brand name measuring cups. One was off by a full tablespoon in one cup.)

We always weigh flour when we bake. A packed cup of flour can nothing else but weigh 20% more than one that is lightly filled. (Most recipes are based on lightly filled cups.) If you are just starting to change your recipes from volumes to weights, start out with 4.5 ounces of flour for every cup. Stay with the same flour as much as potential for the same type of product. different flours have different densities and different flours can act very differently in a recipe. If you weigh your flour and record your results, you can excellent that popular recipe.

Now you know. These are the nemeses that cause the most problems in the kitchen. Knowing what they are--the common pitfalls of the kitchen--will arm you to be a better baker. As you excellent your craft in these four areas, you will turn out phenomenal baked goods.

A Recipe Collection--top 3 Most Requested Delicious Desserts

When you are thinking about serving dessert at your next party, consider offering your guests one of these delicious, homemade desserts. I have found that of all the desserts I have served, these are my "Top 3 Most Requested Delicious Desserts" (in no particular order). Enjoy!





Number One Most Requested Delicious Dessert--Raspberry White Chocolate Dream Bars





1 box white cake mix


1/3 cup evaporated milk


1-1/2 sticks melted butter


1 cup chopped nuts


1/2 cup seedless raspberry jam


12 oz. white chocolate chips





Combine cake mix, milk, butter and nuts. Makes a very gooey dough. Spray a 9 x 13 pan and spread half of the dough into the bottom of the pan. Bake for 10 minutes at 350 degrees.





Melt the jam in the microwave (about a minute) and spread on top of hot crust. Immediately sprinkle chocolate chips over jam. Crumble remaining dough on top and bake an additional 20-25 minutes. Cool completely before cutting.





For bigger parties, this recipe easily doubles and can be made in a 15 x 10 pan.





Once you get the hang of this technique, you can think of all sorts of combinations. How about using chocolate cake with mint chips? Or lemon cake with white chocolate?





Number Two Most Requested Delicious Dessert--Chocolate Amaretto Bundt Cake





1 pkg. chocolate devil's food cake mix


1 small pkg. instant chocolate pudding mix


4 eggs


1 cup milk


1-1/2 oz. Amaretto liqueur


1/2 cup vegetable or canola oil


1 cup semi sweet chocolate chips


1 cup fresh raspberries (optional)


1/2 cup seedless raspberry jam (optional)


Whipped cream (optional)





Glaze





1 stick butter


3/4 cup sugar


1/2 cup Amaretto





Preheat oven to 325 degrees. Combine first 6 ingredients and blend well. Stir in chips. Grease and flour a bundt pan. Pour batter into the prepared pan.





Bake for 1 hour or until toothpick comes out clean.





Melt glaze ingredients in a saucepan or microwave. Pour 2/3 of glaze over top of cake while cake is hot from oven and still in pan. Allow cake to remain in pan for 25 minutes. Remove cake from pan and drizzle with remaining glaze.





When I make this cake dessert, I fill the middle with fresh raspberries and present it on my grandmother's crystal pedestal cake stand which is very dramatic.





Just before serving, I make a raspberry sauce by melting the jam in the microwave.





Each lucky guest gets a plate with some of the sauce, a slice of cake, a few berries and some whipped cream. Yum!





Number Three Most Requested Delicious Dessert--Mystic Mint Cookies





These are melt-in-your-mouth heaven!





Dough


1 cup sugar


1 stick (1/2 cup) butter, softened


1 teaspoon vanilla


1 egg


2 squares (1 oz. each) unsweetened chocolate, melted and cooled


1 cup all purpose flour


1/2 teaspoon salt


Heat oven to 375 degrees.





Mix sugar, butter, vanilla, egg and unsweetened chocolate. Stir in flour and salt.





Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Flatten each cookie with fingertips. Bake until set, about 8 minutes. Remove to cooling racks and cool completely.





Peppermint Frosting


2-1/2 cups powdered sugar


1/2 stick (1/4 cup) butter, softened


3 tablespoons milk


1/2 teaspoon peppermint extract





Mix all frosting ingredients until smooth and of spreading consistency.





Chocolate Drizzle


1/2 stick (1/4 cup) butter, softened


2 tablespoons corn syrup


1-6 oz. package semisweet chocolate chips





Simmer all drizzle ingredients over low heat. Stir constantly until butter and chocolate are melted.





Spread peppermint frosting over cooled cookies then drizzle each with chocolate mixture. Leave on counter for 2-3 hours until frosting is set.





If you serve any of these homemade desserts, you can count on your guests being very happy. And I will bet that you will be handing out recipes, just like I do at my house.

Baking Perfect Breads, Cookies, and Desserts

We're all looking for that perfect pie, or cookies, or loaf of bread. It doesn't always happen. In our experience, there are four reasons that account for most of the less than perfect products.

How to Make Quick and Easy Bar Cookies & Desserts

When you are in a hurry but still want a homemade cookie or dessert, try these delicious recipes. The Chocolate Scotcheroos are very quick and easy since they do not require baking. The crispy rice cereal crust coated with a delicious chocolate-butterscotch mixture is always a hit! The Raspberry Surprise Bars are also very easy as they use purchased slice and bake cookies as their crust. The recipe calls for using butterscotch cookies but chocolate or sugar would work as well.

CHOCOLATE SCOTCHEROOS

1 cup sugar
1 cup white corn syrup
1 pkg (12-oz) chocolate chips
1 pkg (12-oz) butterscotch chips
1 cup creamy peanut butter
6 cups crispy rice cereal

In a 3-quart saucepan, combine the sugar and corn syrup. Cook the mixture over a medium heat, stirring frequently, until the mixture begins to boil. Remove the pan from the heat. Stir in the peanut butter until melted, mixing well. Add the crispy rice cereal and stir until well blended. Press the mixture evenly into the prepared pan. In the microwave or on the stove over hot, not boiling, water, melt the chocolate chips with the butterscotch chips. When completely melted and blended, spread the mixture evenly over the cereal mixture. Allow to cool. Cut into squares or rectangle bars.

Note: In extremely hot weather, keep refrigerated.

RASPBERRY SURPRISE BARS

1 pkg Butterscotch Slice and Bake cookies
8-oz cream cheese
2 tbsp milk
1/2 cup raspberry preserves (or other flavor to suit your taste)

Slice cookies and place close together in a 9 X 13-inch cake pan. Bake cookies at temperature instructed on cookies package for 10 to 12 minutes or until golden brown. Meanwhile mix the cream cheese with the milk. As soon as you remove the cookies from the oven, spread the cream cheese mixture over the top of the cookies. Spread the preserves over the cream cheese. Cool before cutting into squares.
