How to Make Sugar Free Cookie Recipes

Having some sugar free cookie recipes in your baking arsenal is very handy when someone enters your life who can't handle the sugar content in regular cookies. With the guidance in this article, you should be able to make the transition to sugar free cookies easily. Let's get started...

Replace The Sugar

The first thing you need to do with your recipe is replace all the sugar in it.

To do this, you are going to need some sort of alternative sugar substitute. You will want to use a natural sweetener, not an artificial sweetener.

The problem with artificial sweeteners is that they can often have detrimental effect on your health, making them a sub-optimal choice for a substitute.

I always make sure to use 100% natural sweeteners to replace the sugar; I also make sure to use sweeteners that are safe for diabetics.

The two main sweeteners that I use are Agave Nectar, and Stevia. I find that I am able to make recipes that are on-par with their sugared counterparts!

To use Agave Nectar effectively, you will want to put in 1 cup of Agave to replace 1 cup of sugar (1:1 ratio).

For Pure Stevia (that has no filler; make sure you get a good brand!), you will use ¼ of a teaspoon for every cup of sugar.

I sometimes like to mix the two together. So if a recipe calls for 1 cup of sugar, I will use ½ cup of Agave; and 1/8 of a teaspoon of Stevia. This helps to keep the recipe from getting to wet (because agave is a syrup).

Do that, and you should be able to make the perfect sugar free cookie recipes.

Optional: Replace The Milk

A little bonus tip I'll throw in here for you:

If you replace any milk in your recipe with Almond Milk, you can make desserts that are perfect for people with food allergies!

Be sure to get the unsweetened almond milk; then sweeten it with Agave Nectar, shake it; and add more Agave until it tastes like regular milk.

How to Include Quinoa Seeds in Home Baking Recipes

There are many ways of including quinoa in your diet but one of the more unusual is to include it in baking. As far as I am aware this technique has been devised by me and I have never heard of anyone else using quinoa in this way. I stumbled upon it when looking for inspiration to spice up a simple cookie recipe I was about to make that had too much fat in it.

I wanted to reduce the fat content of this particular cookie recipe as I was trying to reduce fat in my diet at the time. The fat in the recipe was butter but I realized that quinoa seeds have oil in them so could be substituted for part of the butter.

The first thing to do is prepare the quinoa in the normal way using 1 part quinoa to 2 parts water. You bring it to the boils and simmer for about 15 minutes. You can cook it for less but for baking you need it to be quite soft to blend in with the other ingredients. The quinoa must absorb all the water as you do not want extra liquid in the mix. I there is remaining liquid turn the heat up to full and boil it off for a minute.

You reduce the butter content by half and slightly reduce the flour amount as well. you simple replace them with the same amount of prepared quinoa in the mix. The cooking time is the same as the normal recipe but you get a crunchier texture and taste to the cookies.

I have used this cooking method for cookies, biscuits and scones. It can take a little trial and error to get the proportions correct. It is a good way to reduce processed fats in recipes. The oil part of the quinoa works to replace the butter and the germ part replaces some of the flour. It is a bit of a balancing act but you will get it with practice

Find out how simply it is to cook quinoa. There are more and more quinoa recipes coming out now. You can find out how to cook quinoa. Learn the superb health benefits of eating quinoa and include quinoa as part of your diet Quinoa Health Tips

Pumpkin Baking Recipes

The smell of pumpkin baking always conjures up memories of Thanksgiving for me. The day always started early with mom bustling about the kitchen to prepare our feast. The Macy's Thanksgiving Day Parade would always be playing in the background as she'd prepare the meal. We'd stop to watch or listen to some of the marching bands and acts they had. But always, always, would we stop to watch Santa coming down the street on his sleigh. To this day, the smells of turkey, cranberry, potatoes, gravy, stuffing, and pumpkin all blending in a beautiful medley of smells brings a smile of memory to my face. Easy Sugar Cookie Recipes: From Delicious Drop Cookies To Fun, Tasty Cut-Outs

If you're in the mood for something sweet, there are a lot of easy sugar cookie recipes to choose from. But sugar cookies come in all sorts of different shapes and sizes. They can be as simple as drop cookies, a spoonful of dough dropped onto a cookie sheet, or as elaborate as carefully cut-out cookies decorated with pretty, colorful icing.

So which one of those easy sugar cookie recipes should you pick? Which one will give you the best results for the type of sugar cookie you're trying to make?

The truth is, most easy sugar cookie recipes use the same basic list of ingredients, with maybe an added spice here or there. What it really comes down to are the quantities of each ingredients, and how you treat the dough.

Each ingredient in a sugar cookie has a specific role, and tweaking its quantity will give you a slightly different cookie. So what goes in a sugar cookie?

Flour. Flour gives the cookie its structure. When you mix flour in liquids, it forms tough strands of gluten. The more you mix it, and the more flour you add, the tougher a cookie you get.
Butter. Butter doesn't just add flavor. It also helps the cookie stay more tender by preventing too much gluten from forming. It also lets the cookie spread out more.
Sugar. Sugar helps the cookies be more fluffy by trapping air inside the butter when you cream it. Also, if you don't cream it enough, the undissolved sugar will make the cookie spread out more.
Eggs. The yolks help make a more tender cookie, and the whites help give it structure. They also add some moisture.
Baking powder. Baking powder helps the cookie rise.
Baking soda. Baking soda makes the cookies brown faster, and makes the cookie more tender.
Vanilla. Vanilla is just there for flavor, but it really does make all the difference.
Salt. Like vanilla, the salt is just there for flavor, although it can toughen the cookie, too.

But it's not just the ingredients that matter in easy sugar cookie recipes. How you handle the dough will affect what kind of cookie you get.

The longer you cream the butter and sugar, the fluffier a cookie you'll get. It also won't spread as much, perfect to help cut out cookies keep their shape.
The longer you mix the flour with the wet ingredients, the tougher a cookie you'll get. If you're looking for something fluffy, avoid over-mixing.
If you want to roll out the dough, you'll need to refrigerate it until it's firm enough to work with.
You can also refrigerate the raw cookies once they're shaped. It helps them keep their shape in the oven.

When you're baking, it's always a good idea to start with a recipe. But once you have a decent recipe, you can tweak it to suit your tastes and purposes, and make your own easy sugar cookie recipes.

Three No Bake Cookie Recipes

Kids love cookies, but moms are often too busy to bother baking in the summertime. But wouldn't it be great if the kids could make their own? The first recipe requires no baking at all. The second recipe makes use of a stove top and the third recipe needs just a microwave. Because these aren't baked, you don't have to worry about the chemistry of the ingredients. That makes them practically full proof!

RECIPE 1 COOKIE DOUGH NO BAKES: Here is a twist on a no bake cookie. The recipe calls for ¼ cup butter creamed with 1/3 cup brown sugar. If you don't have brown sugar just use regular sugar. (If you are a purist add a teaspoon of molasses or maple extract.) Add 1 cup of oatmeal, 7 ounces of sweetened condensed milk and ½ teaspoon of vanilla extract. Add ½ cup of chips or nuts or ¼ cup of each. Shape the dough into one-inch round balls or use a cookie scoop. Place on wax paper and chill for about an hour. With a one-tablespoon sized scoop, you should get about 25 cookies.

I collect different chips throughout the year to use for cookie decorating at Christmas. So I have coffee-flavored, peanut butter, red cherry-flavored, green mint-flavored, yogurt and butterscotch chips that I like to use for variety and for color. I also keep different chopped nuts in the refrigerator. Mix and match to your heart's content to make up that last half cup.

I call the standard no-bake cookies my "kitchen sink cookies," because I like to add whatever I have on hand to them. The only concern is keeping a balance between the wet and dry ingredients, so that they will harden when chilled.

RECIPE 2 STANDARD NO BAKE COOKIES: Besides nuts and chips, I like to add coconut flakes also. For anyone allergic to chocolate, I have adapted this recipe for carob powder. So mix 2 cups of sugar with ½ cup each of milk, butter and carob powder in a pan. If using cocoa, just use ¼ cup of cocoa powder. Cook for one minute after it comes to a boil. Add ½ cup chunky or plain peanut butter, a teaspoon of vanilla extract and 3 cups of oatmeal. Drop on wax paper and chill. Try different extracts, like cinnamon or peppermint, but use less than a teaspoon. I have candy flavorings on hand that only require a few drops for a big flavor.

The oatmeal takes up a lot of the moisture, so I use a little less of it, if I am adding nuts or chips or coconut flakes. The recipe is fairly forgiving and allows for a lot of experimenting. If you are short on oatmeal, dig in the bottom of a cereal box and use the crumbs from that to come up with the 3 cups. You can also crush some cereal, graham crackers or vanilla wafers to compensate.

RECIPE 3 STRAWBERRY NO BAKE BALLS: Now for sheer decadence, here is a recipe that only makes a dozen cookies. You can double the recipe, but they are very rich. Microwave on low to melt ¼ cup of semi-sweet chocolate chips and let cool (or use ¼ cup carob powder and skip the microwaving). If the chips don't melt (and some won't), just grind them till they are a powder. Mix in 2 ounces of cream cheese. Stir in 1 large chopped strawberry. (I have also used 5-6 raspberries.)

Add 20 crushed vanilla wafers. Use more wafers if the batter is too thin. Refrigerate 2 hours until firm and then shape into 1-inch balls. Microwave some Candy Melt flavored chips until melted (use defrost setting for about 1 to 1 1/2 minutes) and dip the chilled balls into the melted chips. Place on wax paper and refrigerate until set. I rate these PG for mature audiences. They may be richer than your younger children can appreciate!

5 Easy No-Bake Pie Crust Recipes

During the hot Summer months, I avoid heating up my kitchen with the oven. I prefer to make no-bake pie crusts, by using alternative ingredients.
You don't need to use a rolling pin, dough board, pastry blender or any of the traditional pie baking equipment. All you basically need are the ingredients, a large bowl, a measuring cup and of course, your pie pan.
These recipes are easy to make and best suited for refrigerated or frozen dessert-style pies. You will want to chill your pie crust for 1 hour (or until firm), before filling the pie shell with your pie filling.
Here are 5 of my favorite recipes.
Chocolate Cookie Crumb
24 chocolate sandwich cookies, crushed
1/4 c. butter, melted
Combine crushed cookie crumbs with melted butter until well mixed. Press mixture firmly into place into a 9" around pie pan.
Cornflake Crust
1 c. crushed cornflakes
1/4 c. sugar
6 tbsp. butter (melted)
Combine crushed cornflakes with sugar and butter, until well mixed. Spread the crumb mixture evenly and firmly into a 9" round pie pan.
Vanilla Wafer Crust
1 1/2 c. finely crushed vanilla wafers (about 39)
6 tbsp. butter, melted
Combine crushed wafers with butter, until well mixed. Spread the crumb mixture evenly and firmly into a 9" round pie pan.
Graham Cracker Crumb
1 c. crushed graham crackers
1/4 c. sugar
6 tbsp. butter (melted)
Combine crushed graham crackers with sugar and butter. Toss thoroughly to combine. Press mixture firmly into a 9" round pie pan.
Pretzel Crust
1 1/4 c. crushed pretzels (no salt)
1/4 c. sugar
6 tbsp. butter (melted)
Combine crushed pretzels with sugar and melted butter. Toss to thoroughly to combine. Press mixture firmly into a 9" round pie plate.

Chocolate Cookie Recipes (fun to Make With the Kids)

One of the best ways to make memories with your children or grandchildren is to allow them in the kitchen with you.  Kids love to bake and they enjoy eating and sharing with others the goodies they make.  It is also a fun learning experience for them, one they don't even realize is a lesson.  Organing ingredients, following the instructions in the recipe, working together to make something special, and don't forget clean-up.  It is important for children to learn that after the fun, there is clean-up to be done.  If you work it right, they will even think that is part of the fun.  Counting and measuring is also a good math lesson.  So don't try to keep your children out of the kitchen.  Invite them in and have fun together.  Homemade Chocolate Sandwich Cookies is a recipe they will love as they get to put the cookies and filling together to make "sandwiches".  They may not get them perfect but life is not about perfection in everything.  You aren't trying to make a masterpiece, just a cookie!  And the kids will love dunking the Chocolate Dunk Cookies in the chocolate mixture.  Note:  When baking with chocolate and children, be sure they wear aprons, smocks, or older clothing.

Roll the dough (about 1/4 inch thick) out on a slightly floured outside and cut into shapes (smaller shapes work best with this dough). Bake in a 350 degree oven for 10 to 12 minutes. Frost with powdered sugar icing (milk or cream and powdered sugar). Word of warning on this recipe, it makes a very large batch so I hope you have a lot of house and friends to share this with.

Sugar Cookies (roll-out)

3 cups flour

1 cup sugar

1/2 teaspoon salt

1 1/2 teaspoons baking powder

1 cup soft butter

1 beaten egg

3 tablespoons cream

1 teaspoon vanilla

Combine softened butter and sugar until creamy. Add in egg, cream, and vanilla. Sift together flour, salt, and baking powder and add it to the liquid mixture. Chill for at least one hour. Roll out to about 1/4 inch thickness on a lightly floured outside and cut into your popular Christmas cookie shapes. Bake in a 350 degree oven for about 10 minutes. If desired, put red and green sprinkles on top of the cookies before putting them in the oven. If you would rather make it a house project, bake the cookies, allow to cool, and make a powdered sugar frosting (milk and powdered sugar). Divide up the frosting into distinct bowls and color it with food coloring. Sprinkles, chocolate chips, red hots, and mini M&Ms can help add fun to the frosting process.

Save Time with No-Bake Cookies

Whether you don't want to heat up the kitchen or the demands of getting the kids out the door are upon you, it's nice to have a few no-bake cookie recipes on hand. We thought we would share some of our favorites with you.

Cranberry Coconut Bars

Cookie Bake

This first recipe, Cranberry Coconut Bars, is more of a big kid cookie-it has too much fruit and too many nuts in it to suit most youngsters. But it so scrumptious and easy, we had to consist of it. If you are making a lunch for a spouse or a teenager, we think this will be a hit. Of course, it doesn't have to go in a lunch pail.

This is a microwave cookie that can be mixed right in the baking pan. How's that for convenience?

If you are not fond of dried cranberries, think substituting dates, raisins, or chopped apricot pieces in this recipe.

1/2 cup butter

1/2 cup brown sugar

1 1/2 cup quick rolled oats

1/4 cup light corn syrup

1/2 cup dried cranberries

1/2 cup sweetened flaked coconut

1/2 cup walnut pieces

Directions

1. Place butter in an 8-inch square, microwave-safe baking dish. Microwave until the butter is melted.

2. Stir in the brown sugar until dissolved. Stir in the rest of the ingredients. Press the combination firmly into the dish.

3. Microwave for three to five minutes or until lightly browned. If your microwave does not have a rotating carousel, rotate the dish twice while cooking.

4. Let the cookies cool and then cut them into bars with a sharp knife. Wrap them individually to pack in a lunch.

This formula will make sixteen 2 x 2-inch squares.

This next formula makes a great kid cookie. It's practically confection-like but is so packed with energy and hearty oats that you won't mind giving your youngster a few. This cookie is best with a tall glass of milk.

Chocolate Peanut Butter Drops

This is a range-top cookie. Because it is a no-baker and so full of energy, it makes a great camping cookie.

2 cups sugar

1/2 cup milk

1/4 cup butter

1/3 cocoa

2 1/2 cup quick oats

1/2 cup peanut butter

1/2 tablespoon vanilla extract

Directions

1. Incorporate sugar, milk, butter, and cocoa in a medium saucepan. Cook over medium heat, stirring occasionally, until the combination comes to a boil. Cook for two more minutes stirring constantly and then take off the pan from the heat.

2. Stir in the peanut butter and vanilla, then the oats.

3. Let cool for several minutes and then drop spoonfuls onto waxed paper. Let the cookies cool wholly before removing them from the waxed paper.

More No-Bakers

When reasoning of no-bake cookies, don't forget the perennial favorites, Rice Krispie Treats and Frosted Graham Crackers. We're assuming every person has the formula for Rice Krispie Treats. think adding chocolate chips, dried fruit pieces, or cinnamon candies for a diminutive pizzazz.

To make Chocolate Rice Krispie Treats, melt 2/3 cup chocolate chips (for a formula calling for six cups of cereal) with the marshmallows and butter. This is a real favorite-our kids like these more than regular Rice Krispie Treats and they are no more difficult to make.

For Frosted Graham Crackers, naturally pick your popular frosting and sandwich that in the middle of two graham cracker squares. Pick a frosting with a powdered-sugar base that will set up firm and won't be messy.

How to Make The Best Sugar Cookie Recipes Which Wow everybody

Cookie baking is fun - particularly when you have easy and easy to bake sugar cookie recipes to follow. But the most enjoyable aspect is the decorating. This is what turns a plain lowly cookie into an edible work of art. You unmistakably are minute only by your imagination.

The first step of course is to make the cookies. There is no creaming butter and sugar involved. The dough is worked in a food processor. Nothing could be easier.

Cookie Bake

Ingredients you will need:

9 oz / 280 g /2 ½ cups plain / all-purpose flour

5 ½ oz / 170g unsalted butter, chopped

Pinch salt

3 tablespoons caster / superfine sugar

2 egg yolks beaten with 4 tablespoons ice-cold water

Preheat the oven to 400oF / 200oC. Line two baking sheets with parchment or baking paper.

In the bowl of a food processer, process the flour and butter until it resembles tasteless crumbs. Add the salt and sugar and process again until just combined, being specific not to overprocess the mixture.

With the motor still running, add the egg yolk compound and process using the pulse button until it forms a glossy ball.

Remove from processer, wrap in plastic wrap and chill in the fridge for 30 minutes.

Remove from the fridge and divide the compound into smaller portions for rolling. While rolling one portion, keep the remainder refrigerated. Roll the dough out to a ¼ inch / 6 mm thickness. Using cutters, cut out shapes, placing the cutters as close to the edges as potential to minimise the whole of times you re-roll the dough. Repeat with the remaining dough, then consolidate all the leftover dough and re-roll.

Place onto the baking sheets allowing room for spreading and bake for 10-15 minutes or until a golden color.

Remove them from the oven and leave on the baking sheets for 2-3 minutes before lifting them onto wire racks to cool.

Allow to cool thoroughly before icing and decorating.

Now comes the fun part, icing and decorating. Glace icing is perfect for this sugar cookie recipe. It can be drizzled over the top or piped into easy designs.

This glace icing method is adequate to ice 24 cookies.

1 cup icing / confectioners sugar

A few drops of vanilla essence

1 tablespoon of hot water

A few drops of food coloring (if required)

Sift the icing sugar into a bowl then add the vanilla essence. Gradually stir in the hot water until the compound is the consistency of thick cream. Add the water a few drops at a time until you have the desired consistency. If you find you have added too much water and the icing is too runny, naturally add more icing sugar.

Spoon a minute icing into the centre, then using the back of the spoon, spread out to cover the whole cookie. Glace icing sets very quickly, so if you are adding other decorations, you will need to work swiftly before the icing sets.

Glace icing is also extremely versatile. It is perfect for feathering and drizzling.

To generate a feathered effect, cover the cookie with icing as above, then pipe any level parallel lines of icing in a contrasting color over the top. Take a toothpick and draw lines in the opposite direction, Gradually dragging the color straight through the icing.

Alternatively, pipe lines of icing, or, if you want to be adventurous, pipe designs over the tops of your cookies.

Really, the possibilities are endless.

Having a large range of sugar cookie recipes that you can decorate in creative ways is great fun.

Super How to Bake: Muffins (recipes)

Muffins are a mainstay around our house. They are as nourishing as they are good to eat. They are quicker and easier to make than cookies and usually contain much less sugar and fat. We usually eat them for breakfast but like them with any meal. (For Easter, we served cranberry nut muffins with a ham dinner.) They work well for snacks and desserts as well. Extras can be frozen and heated in the microwave for hot muffins anytime.

Chocolate Cookie Recipes - Chocolate Sticks

I do not think one can ever have sufficient chocolate cookie recipes. Many chocolate cookie recipes go way back to our grannies baking them in big batches for all the visiting grandchildren. This formula is no exception but, it is an old fashioned formula that can very nothing else but be made with an galvanic mixer with a dough hook. I usually start with the general beater for creaming the butter and sugar and only when it starts getting very stiff do I move to the dough hook. This chocolate cookie formula is best made the day before you want to bake it and completely cooled down in the refrigerator.

Ingredients for these chocolate sticks:
6 tablespoons of butter 3/4 cup of sugar 1 egg 1 tablespoon of milk 1 teaspoon of vanilla or pinch of cinnamon 5 teaspoons of cocoa 1/8 teaspoonful of baking powder 1 1/4 to 1 1/2 cups of sifted pastry flour
Method:
Cream the butter until soft. Add the sugar gently and beat well Add the beaten egg, milk and vanilla and mix thoroughly. Sift cocoa, baking powder, and a pinch of salt with about one-half cup of the flour. Stir this into the blend first, then use the remainder of the flour, and more if necessary, to make a firm dough that will not stick to the fingers. Place in the fridge to harden. Preheat the oven to 350oF. Sprinkle the board with cocoa and a very small amount of sugar. Use small pieces of the dough at a time and roll out thin, cut in strips about one-half inch wide and three inches long. Place intimately in pan and bake in the oven for three or four minutes. Great care should be taken in the baking to preclude burning. Watch them like a hawk! Gather the scraps after each rolling, if soft, and set away to harden, if you have to use too much cocoa to preclude them from sticking it will make them bitter. The colder and harder the dough is, the great it can be handled; therefore it is best made the day before using.

Cookie Bake

Enjoy!
