5 Easy No-Bake Pie Crust Recipes

During the hot Summer months, I avoid heating up my kitchen with the oven. I prefer to make no-bake pie crusts, by using alternative ingredients.
You don't need to use a rolling pin, dough board, pastry blender or any of the traditional pie baking equipment. All you basically need are the ingredients, a large bowl, a measuring cup and of course, your pie pan.
These recipes are easy to make and best suited for refrigerated or frozen dessert-style pies. You will want to chill your pie crust for 1 hour (or until firm), before filling the pie shell with your pie filling.
Here are 5 of my favorite recipes.
Chocolate Cookie Crumb

Save Time with No-Bake Cookies

Whether you don't want to heat up the kitchen or the demands of getting the kids out the door are upon you, it's nice to have a few no-bake cookie recipes on hand. We thought we would share some of our favorites with you.

Cranberry Coconut Bars

Cookie Bake

This first recipe, Cranberry Coconut Bars, is more of a big kid cookie-it has too much fruit and too many nuts in it to suit most youngsters. But it so scrumptious and easy, we had to consist of it. If you are making a lunch for a spouse or a teenager, we think this will be a hit. Of course, it doesn't have to go in a lunch pail.

This is a microwave cookie that can be mixed right in the baking pan. How's that for convenience?

If you are not fond of dried cranberries, think substituting dates, raisins, or chopped apricot pieces in this recipe.

1/2 cup butter

1/2 cup brown sugar

1 1/2 cup quick rolled oats

1/4 cup light corn syrup

1/2 cup dried cranberries

1/2 cup sweetened flaked coconut

1/2 cup walnut pieces

Directions

1. Place butter in an 8-inch square, microwave-safe baking dish. Microwave until the butter is melted.

2. Stir in the brown sugar until dissolved. Stir in the rest of the ingredients. Press the combination firmly into the dish.

3. Microwave for three to five minutes or until lightly browned. If your microwave does not have a rotating carousel, rotate the dish twice while cooking.

4. Let the cookies cool and then cut them into bars with a sharp knife. Wrap them individually to pack in a lunch.

This formula will make sixteen 2 x 2-inch squares.

This next formula makes a great kid cookie. It's practically confection-like but is so packed with energy and hearty oats that you won't mind giving your youngster a few. This cookie is best with a tall glass of milk.

Chocolate Peanut Butter Drops

This is a range-top cookie. Because it is a no-baker and so full of energy, it makes a great camping cookie.

2 cups sugar

1/2 cup milk

1/4 cup butter

1/3 cocoa

2 1/2 cup quick oats

1/2 cup peanut butter

1/2 tablespoon vanilla extract

Directions

1. Incorporate sugar, milk, butter, and cocoa in a medium saucepan. Cook over medium heat, stirring occasionally, until the combination comes to a boil. Cook for two more minutes stirring constantly and then take off the pan from the heat.

2. Stir in the peanut butter and vanilla, then the oats.

3. Let cool for several minutes and then drop spoonfuls onto waxed paper. Let the cookies cool wholly before removing them from the waxed paper.

More No-Bakers

When reasoning of no-bake cookies, don't forget the perennial favorites, Rice Krispie Treats and Frosted Graham Crackers. We're assuming every person has the formula for Rice Krispie Treats. think adding chocolate chips, dried fruit pieces, or cinnamon candies for a diminutive pizzazz.

To make Chocolate Rice Krispie Treats, melt 2/3 cup chocolate chips (for a formula calling for six cups of cereal) with the marshmallows and butter. This is a real favorite-our kids like these more than regular Rice Krispie Treats and they are no more difficult to make.

For Frosted Graham Crackers, naturally pick your popular frosting and sandwich that in the middle of two graham cracker squares. Pick a frosting with a powdered-sugar base that will set up firm and won't be messy.

Five Delicious Ideas For No-Bake Cheesecakes

Baked cheesecake is actually custard, and it's the eggs that make it rich and creamy and cause it to set. They should never be baked hotter than 180 degrees Celcius, and a long, slow bake will ensure uniform internal temperatures. By contrast, no-bake cheesecakes rely on gelatine to help it set up, and they need to be chilled in the refrigerator for at least four hours or overnight.
Some people prefer to eat only baked cheesecake; however, chilled cheesecake is as delicious and even easier to make when in need of a special quick dessert. With so many scrumptious, no-bake cheesecake recipes, the possibilities are virtually endless. Here are five suggestions for delicious, no-bake cheesecakes to try for your next family gathering, birthday party or afternoon tea.
1. Chocolate-Sandwich Cookie Cheesecake
For biscuit lovers, a Chocolate Sandwich Cookie Cheesecake will make mouths water. Combine 50g of melted butter with 50g chocolate sandwich cookies. Press into a spring-form pan and chill. Beat a block of softened cream cheese and ¾ cup caster sugar until smooth, then fold in 3 teaspoons gelatine dissolved in ¼ cup boiling water, 2 tablespoons lemon juice, 1 cup lightly whipped cream and 1 cup chocolate sandwich cookies that have been crushed to crumbs. Pour into the chilled crust and refrigerate for 30 minutes. Sprinkle with extra cookies.
2. Toffee Mango Liqueur Cheesecake
For a rich and creamy dessert, try a Toffee Mango Liqueur Cheesecake. Combine 1 cup of sweet biscuit crumbs with 60g melted butter and 2 tablespoons cocoa. Press into a spring-form pan and chill. Beat a block of softened cream cheese and ¾ cup caster sugar until smooth. Add in ¼ cup orange juice, 2 tablespoons triple sec liqueur, 1-1/2 tablespoons gelatine dissolved in 1/4 cup boiling water, and 2 teaspoons grated orange rind and beat until just combined. Gently fold in ¾ cup pureed mango slices and ½ cup lightly whipped cream. Pour into crust and chill until set.
3. Two-Layer Cheesecake
This cheesecake has two layers – a passionfruit layer and a strawberry layer. After setting, for children's parties, you could decorate with a smiley clown face, or, for a more sophisticated look, skip the clown and sprinkle with rose petals then glaze.
First make your cheesecake base by combining 1 cup biscuit crumbs with 1/3 cup melted butter, then press into a spring-form pan and chill. Beat a block of softened cream cheese until smooth, then add ½ cup caster sugar, ¼ cup lemon juice, 2 tablespoons lemon rind, 1-1/2 tablespoons gelatine mixture dissolved in ¼ cup hot water, and blend well. Divide this mixture in half, then add 1/2 cup passionfruit pulp to one portion. Pour into the prepared crumb crust and chill for 15 minutes. Add 1/2 cup strawberry pureĆ© to the remaining mixture. Pour over firm passionfruit and chill.
Now it's time to decorate: create a clown face with assorted lollies. You could also add a little jelly to the top of the cheesecake to create a shiny face, before decorating with the lollies. Alternatively, wash and towel dry your rose petals, sprinkle over the cake, and scatter silver sugar balls among the petals. Brush with a clear gelatine glaze for extra shine and allow to set.
4. Jaffa Extravaganza Cheesecake
Jaffa Extravaganza Cheesecake is a decadent choice for any chocolate lover. Combine 1 cup plain chocolate biscuit crumbs with 50g melted butter, press into a spring-form pan, then chill. Beat together a block of softened cream cheese, ¼ cup caster sugar, and 1 tablespoon grated orange rind until smooth. Stir in 3 tablespoons gelatine mixed with ¼ cup hot water and fold into 200g dark chocolate melts and 300ml whipped cream. Pour this filling into base and refrigerate until set. Top with dark chocolate orange segments, orange segments, and orange rind strips. Use 10 plain chopped chocolate biscuits to form a side crust.
5. Lime Extreme Cheesecake
Lime Extreme Cheesecake is a perfect choice for a zesty treat on a hot summer day. Combine 1-1/4 cups whole meal biscuit crumbs and 80g melted butter. Press into a greased spring-form pan, then chill. Combine 1 packet of lemon lime jelly crystals with ½ cup boiling water until dissolved, then cool. Beat 500g of light spreadable cream cheese and ¼ cup low calorie sweetener until smooth. Stir in the lime jelly, 200g reduced fat vanilla yoghurt, ¼ cup lime juice, and 1 tablespoon lemon rind. Fold this through 3 stiffly beaten egg whites; pour into prepared base, and then chill.

Chelsi Woolz, domestic goddess, is rather keen on the occasional slice of no-bake cheesecake. She enjoys cooking and is always on the look out for a new recipe or two.

Easy No-Bake Recipes for Families

Every parent knows just how much their children love to help out in the kitchen. As children begin to strive toward their independence, parents are still a bit leery in the kitchen as they want to avoid any burns. There are many easy no-bake recipes for families that promote bonding as well as providing a yummy snack.

This simple cookie is the first recipe to try out. The needed ingredients are as follows: 2 cups or 12 oz semi sweet chocolate chips, 2 cups of butterscotch chips (peanut butter chips can be used as well as long as allergies are not an issue), ½ teaspoon of vanilla, and 3 cups of chow mien noodles. A cup of peanuts or walnuts can be added in as well depending on preference. Once all of the ingredients are gather, melt the chips in the micro wave and mix the noodles in until they are well coated. Once that has been mixed, drop the mixture onto wax paper by the teaspoon. After all of the mixture has been placed on the wax paper, set it into the fridge until it has hardened.

Cookie Bake

The next fun and easy no-bake recipe is called "frogs." This recipe will yield 36 "frogs." The ingredients needed are as follows: ½ cup of cocoa, ½ cup of milk, ½ cup butter, 2 cups of granulated sugar, 1 teaspoon of vanilla extract, 1 cup of flaked coconut, and 3 cups of quick-cooking rolled oats. After the ingredients have been gathered line two baking or cookie sheets with waxed paper. Once this has been done, on the stove top in a large saucepan, stir the butter, milk, sugar and cocoa. Bring to a boil and continue to boil for 5 minutes and then remove from the heat. Make sure to turn off the burner to avoid injury. Next, stir the oats, coconut and vanilla extract in the "sauce" and combine well. Once the mixture is blended well, drop it by the tablespoon full onto the pre prepared baking sheets. Place in the fridge for an hour or until it has been well set. Make sure to keep these treats refrigerated.

The last easy no-bake recipe is peanut butter balls. To make this treat the following ingredients are needed: ½ cup honey, ½ cup of peanut butter, 1 cup of nonfat dry milk, 1 cup of quick cooking oats and wax paper. This recipe will yield 24 total peanut butter balls. After the ingredients have been gathered, mix them well and from there roll 1-inch balls out of the mixture. This is as fun as playing with kids' clay. Place the peanut butter balls onto the wax paper and place in the fridge until they have set.

These no-bake recipes are very easy to make and require minimal ingredients. Some ingredients may already be on hand in the kitchen. Give a child an extra-large bowl to mix the ingredients for these recipes and there is less likelihood of creating a mess on your table. This is a great idea for a family night or the holidays.

What To Look For In A No-Bake Cookie Recipe

When it comes to cookie recipes, there are certain "must have" ingredients that make the whole thing possible. You've got a binder of some sort, usually flour, that holds the assemblage together. You've got a fat of some sort, that adds moistness and flavor and helps in the browning and cooking. There will usually be a leavening agent, to make the cookie puff up and look right and eat properly. And, of course, you'll have a flavoring of some sort, running the gamut from peanut butter and chocolate chips to more exotic things like anise or poppy seed. The no-bake cookie recipe has some of these, but not all.

First off, very few of the ingredients will be in raw form. Thus, you'll have no raw eggs, very little flour and no leavening agents. Since these cookies will not be baked, eggs would simply make the no bake cookies dangerous, and leavening agents wouldn't have the heat they need to work properly.

Cookie Bake

You may find other cookies or baked goods actually used as flour would be used in a regular cookie recipe. For instance, vanilla wafer cookies, ground or chopped, are often used as the binder for shaped items like baseball cookies.

Even if cookies are not used to make the cookies, some form of finished product will usually find its way into the recipe. Take haystack cookies, that perennial holiday cookie basket favorite, which use chow mein noodles to form the haystack shape and bind together the peanut butter and butterscotch or chocolate. Graham crackers, with their fairly light flavor and sweet finish, are often used. Some recipes even use powdered sugar as "flour," which makes sense from a structural standpoint.

One thing you'll almost never find is a "lightly sweet" no-bake cookie recipe. Almost all of them are very heavy on the sugar, honey, peanut butter, chocolate or other sweet source. Without the subtle chemical reactions of baking, the sugar has to carry the day.

Easy and Delicious No-Bake Cookies

Cookies have always been one of the world's favorite snacks. Whether chewy, chocolaty, or nutty, these treats can be enjoyed any time of the day. Even Santa Claus can't resist their sweet goodness and always eats his fill before he leaves each house. Prepackaged cookies of all varieties are readily available in snack bars and grocery stores, but nothing can ever compare to homemade cookies. Not only do you control the freshness and quality of the ingredients used to make them, you can customize recipes with add-ins that you want. Cookies go well with any time of the day, like breakfast and snack or TV time, and are perfect as adorable packages of edible giveaways for any special occasion. Making cookies at home can be lots of fun, especially when you make them with kids or that special someone. Don't forget to mix in what they call the "secret ingredient," which is really no secret at all.

But for those who are in a hurry and want to make delicious cookies without the wait or risk of having trouble baking them - we're all too familiar with that acrid burning smell wafting from the oven, aren't we? - there are no-bake cookie options that result in just as yummy, though much easier to prepare, decadence. When you bake cookies, the heat enables the flour and other ingredients to cook. It can make the cookies crunchy, crumbly, soft, or chewy. But no-bake cookies also offer a great texture without nearly as much effort. Here are some sure-fire no-bake cookie recipes that will be a hit with everyone.

Cookie Bake

Combine dry ingredients in a saucepan: two cups of sugar and a third cup of cocoa. Next, slowly pour in a half-cup of milk, followed by one-fourth cup of butter. Place the mixture over medium heat and stir occasionally until butter melts and mixture starts to boil. When you notice that the ingredients have dissolved and the mixture is combined thoroughly (usually about 2 minutes), remove the pan from heat.

Immediately add half a teaspoon of vanilla extract and half a cup of peanut butter to the mixture (make sure to do this while it is still hot). Next, add two and a half cups of oats and stir to mix thoroughly. Allow the "dough" to cool enough to handle but so long that is sets, then spoon your desired size serving onto wax paper. The average serving for one hearty cookie is about two spoonfuls per cookie. Allow cookies to set for about one hour, or until the cookies reach a chewy but solid consistency.

If you're game, you can also add or substitute other ingredients for a variety of tasty confections. For instance, use brown sugar instead of white for extra sweetness and crunch, dried fruits such as strawberries or cranberries for healthier treats, or toasted coconut or chopped nuts for a bite full of surprise and goodness. It is very easy to modify, personalize, and create your own cookie recipe with homemade no-bake cookies. Experiment and have fun!

If you're in a super hurry, most grocery stores offer the option of prepackaged no-bake cookies. Simply remove them from the packaging, follow the instructions on the box - most require that you just add water and butter - chill them in the fridge for a few minutes, and enjoy!

No-Bake Cookies and Cream Cheesecake

A good cookies and cream cheesecake is like a good Sunday nap. You can live without it... but why would you ever want to?

Well, this cookies and cream cheesecake is a fantastic blend of the Oreos we all know and love, plus the creamy texture of a delicious cheesecake. The best part is that this recipe is "no-bake" which means no oven required. It is a perfect answer to dessert on a hot summer night!

Cookie Bake

Just pop this no-bake cookies and cream cheesecake into the fridge and soon you'll be ready to enjoy it!

INGREDIENTS:

24 chocolate sandwich cookies (Oreos), finely crumbled, about 2 cups

6 tablespoons margarine, room temperature

1 envelope unflavored gelatin

1/4 cup cold water

8 oz cream cheese, softened

1/2 cup sugar

3/4 cup milk

1 cup heavy cream, whipped

Coarsely crumbled chocolate sandwich cookies (Oreos), about 1 to 1 1/2 cups

DIRECTIONS:

1) Combine fine cookie crumbs and soft margarine; press into bottom of 9-inch springform pan. In a saucepan, soften gelatin in cold water; stir over low heat until dissolved. In a mixing bowl, combine cream cheese and sugar, mixing at medium speed of an electric hand-held mixer until well blended. Gradually add gelatin mixture and milk, mixing until well blended.

2) Chill until mixture is thickened but not set; fold in whipped cream. Reserve 1 1/2 cup cream cheese mixture; pour remaining cream cheese mixture over crust. Top with coarsely crumbled cookies then remaining cream cheese mixture. Chill until firm.

Once your simple cheesecake is complete, it is only a matter of time before it firms up and you can eat it. Although it may seem like a tedious and time-consuming task; in the end you will actually still save the time it would have taken to bake the cheesecake in the oven.

This cookies and cream cheesecake recipe is no-bake but all flavor!

1 cup powdered (dry) skim milk

1/2 cup Splenda (or use the sweetener of your choice, to taste)

2 cups applesauce (or use 1 cup of applesauce and 1 cup canned crushed pineapple)

Preheat oven to 350 degrees.

Mix all ingredients together. Pat into a non-stick 9x13" baking pan. Bake about 20 minutes, or until a little brown on top. Let cool slightly and cut into bars, then cool completely before removing from the pan.

Yield: about 16 bars

You can make many variations of this basic recipe with other fruits, nuts, and 2 cups of any moist, sweet ingredient such as apple butter, fruit puree and so forth. For another delicious version try:

Mango-Pumpkin Oatmeal Bars

1 cup powdered (dry) skim milk

1 cup bottled mango sauce (Trader Joe's brand)

1 cup canned pumpkin

1 teaspoon cinnamon

1/2 cup raisins

1/2 cup sliced almonds

2 tablespoons buttermilk, milk or yogurt

Preheat oven to 350 degrees.

Mix all ingredients together. Pat into a non-stick 9x13" baking pan (spray with Pam or line with foil if desired). Bake about 20 minutes, or until a little brown on top. Let cool slightly and cut into bars, then cool completely before removing from the pan.

Yield: about 16 bars

Fruity Pebbles

3 cups mixed dried fruits

1 cup finely chopped pecans

grated rind of 1 lemon

½ cup toasted wheat germ, plus more for rolling

½ teaspoon cinnamon

2 tablespoons chocolate-orange liqueur (optional)

Chop the fruits in a food processor to blend. (If they are very dry, soak them in some water for several hours or steam them in a countertop steamer for about 15 minutes. Drain.) Combine the fruit mixture with the remaining ingredients. Shape into small (½") balls and roll in additional toasted wheat germ. If you have extra nuts, you can use finely ground pecans for rolling instead of wheat germ.

Yield: 40-50 small balls

Make mini party sandwiches!

Cookie Bake

Cookie cutters are a great way to cut out small, shaped sandwiches for parties. Add some pizzazz to that PB&J for kids parties or those ham sandwiches or cucumber sandwiches for adults.  Just make your sandwiches as normal and use your sharpest cookie cutter to cut out the shapes.  You can also use it to jazz up the slices on your meat and cheese tray.  Voila!  Your party food just went gourmet.

Fruit is fun on a stick!

Making fruit pops is so easy, a child can do it.  That's why this making them is a fun activity that also encourages healthy eating.  All you have to do is cut the fruit into fun shapes with the cookie cutter and insert a sucker stick.  They'll love eating real watermelon, honey dew, apples, kiwi and more in these fun shapes.  (Note:  This also works great for cutting Rice Krispy treats.)

Start a cookie cutter collection!

Cookie cutters are quite cute these days, and collecting them is a pretty inexpensive hobby.  You'll find them for holidays, special occasions and all sorts of themes.  It would make you a little eccentric and will always be an interesting conversation starter when you're at parties.

Enjoy the sound of music!

Music, you say?  From a cookie cutter?  Yes, wind and cookie cutters can create a melody all their own.  Simply hang the cookie cutters at varying heights to make a wind chime, hang it in a great spot and let the wind do the rest.

Roll in the dough!

Play-Doh, that is.  Children can cut out all sorts of shapes and designs with Play-Doh.  Guaranteeing hours of fun, you'll be amazed with their creativity.

With these alternative uses, you can unleash the magical versatility of cookie cutters.  Soon, you'll discover that you were cut out for each other!

Oatmeal-Fruit Bars Plus a No-Bake "Cookie"

Dried, fruits, nuts, oatmeal and spices are my favorite ingredients for healthful desserts and snacks to satisfy the sweet tooth. You can vary these recipes endlessly by using different fruits and nuts.

Oatmeal Bars

2 1/2 cups old fashioned oats

1 cup powdered (dry) skim milk

1/2 cup Splenda (or use the sweetener of your choice, to taste)

1 tablespoon cinnamon

1/2 cup raisins

1/2 cup chopped walnuts or pecans

2 1/2 cups old fashioned rolled oats

1 cup powdered (dry) skim milk

1 cup bottled mango sauce (Trader Joe's brand)

1 cup canned pumpkin

1 teaspoon cinnamon

1/2 cup raisins

1/2 cup sliced almonds

2 tablespoons buttermilk, milk or yogurt

Preheat oven to 350 degrees.

Mix all ingredients together. Pat into a non-stick 9x13" baking pan (spray with Pam or line with foil if desired). Bake about 20 minutes, or until a little brown on top. Let cool slightly and cut into bars, then cool completely before removing from the pan.

Yield: about 16 bars

Fruity Pebbles

3 cups mixed dried fruits

1 cup finely chopped pecans

grated rind of 1 lemon

½ cup toasted wheat germ, plus more for rolling

½ teaspoon cinnamon

2 tablespoons chocolate-orange liqueur (optional)

Chop the fruits in a food processor to blend. (If they are very dry, soak them in some water for several hours or steam them in a countertop steamer for about 15 minutes. Drain.) Combine the fruit mixture with the remaining ingredients. Shape into small (½") balls and roll in additional toasted wheat germ. If you have extra nuts, you can use finely ground pecans for rolling instead of wheat germ.

Yield: 40-50 small balls

5 Summertime No-Bake Cookie Recipes

When it comes to making cookies in the Summertime, I prefer to use the stove-top method. Not only is the stove-top method quick and easy, but it saves on heating up your kitchen.

I find it best to line my countertop or tabletop, with some parchment paper. You will want to 'drop' your cookies onto the parchment paper or a non-stick baking mat, to let them cool. After they have cooled to room temperature, store them in an airtight container.

Here are 5 of my favorite no-baking involved cookie recipes.

Raisin No-Bakes

2 c. raisins
2 c. Chinese noodles
1/2 c. creamy peanut butter
1/4 c. honey

Mix raisins and Chinese noodles in bowl. Put peanut butter and honey in a small saucepan. Stir over medium heat until smooth and hot (no need to boil). Pour over raisin mixture, toss with a fork until evenly coated. Shape rounded spoonfuls into size of golf balls pressing gently with fingers. Let cool.

Chocolate Cracker Cookies

Round Crackers (like Ritz)
1 1/2 lbs. almond bark
peanut butter
12 oz. bag of chocolate chips

Spread peanut butter on crackers. Top with second cracker. Melt almond bark with chocolate chips. Dip sandwich cookies into the chocolate mixture using tongs. Drop onto waxed paper and let cool.

Chow Mein Bites

1 c. peanut butter
12 oz. pkg. butterscotch chips
4 c. miniature marshmallows
4 c. chow mein noodles

Place peanut butter and butterscotch chips in the top of a double boiler. Heat over hot water until melted. Combine with marshmallows and chow mein noodles. Mix well and drop by spoonfuls onto waxed paper. Chill for 1-2 hours.

Sunshine

1 box vanilla wafers
1 stick butter, softened
1 sm. can frozen orange juice
1 box of powdered confectioners sugar
shredded coconut

Crush vanilla wafers to make crumbs. Mix with a stick of butter, orange juice, and sugar. Roll in small balls about the size of walnuts; roll in shredded coconut. Chill for 1-2 hours, until firm.

Chocolate Oatmeal No Bakes

2 c. sugar
1/2 c. cocoa
1/4 c. margarine
pinch of salt
1/2 c. milk
3 c. quick oats (oatmeal)
1 c. creamy peanut butter
1 tsp. vanilla extract

Combine the first 5 ingredients in a large pan and boil for 1 minute, stirring often. Turn off the heat and stir in the oatmeal, peanut butter and vanilla. Drop by the spoonful onto wax paper. Let them cool and they will harden as they cool.
