Christmas Cookie Recipe - Peppermint Christmas Cookies

Peppermint has a rich, vital history that reaches back before the origins of Christmas. This highly prized candy and medicinal addition derives from the peppermint plant. A brief history follows this Christmas cookie recipe made from chocolate and peppermint. Another Christmas cookie recipe, especially peppermint Christmas cookies, ranks high on many a holiday cook's wish list. This recipe adds chocolate and brown sugar to yield a Christmas concoction to add cheer to office parties and family gatherings.

Cookie Bake

1/4 cup of softened butter. 1/4 cup shortening 1/2 cup granulated sugar 1 1/2 cups brown sugar that has been firmly packed 3 eggs 2 teaspoons of vanilla extract 1 teaspoon baking soda 1 3/4 cups of all-purpose flour 3/4 teaspoons table salt 1/4 cup powdered cocoa 3/4 cups semi-sweet chocolate morsels 3/4 cup peppermint candy. Use about 8 candy canes or hard peppermint candy

Directions

Pre-heat oven to 350 degrees. Place peppermint candy inside a plastic bag. Use a wooden hammer or rolling pin to coarsely crush it. Cream the butter and shortening with an electric mixer at medium speed. Gradually add granulated sugar and brown sugar while continuing to beat well. Add eggs one at a time. Make sure eggs are beaten in well blended as you add them. Add vanilla extract. In a separate bowl, combine all-purpose flour, baking soda, salt and cocoa. Add flour mixture to butter mixture. Beat until blended. Fold in semi-sweet chocolate morsels. Fold in crushed peppermint candy. Use a tablespoon to drop cookie dough onto a lightly greased cookie sheet. Keep rounded tablespoonfuls of dough 3" apart. Place cookie sheet into the center of a preheated 350-degree oven. Bake for 12-12 minutes. Do not over bake. Remove from oven to wire cooling racks. Best Christmas Cookie Recipes - Peppermint Pinwheel Cookies

A zesty cookie that resembles a pinwheel.

3/4 cup butter, softened

3/4 cup sugar

1 egg yolk

1 teaspoon vanilla extract

2 cups all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon peppermint extract

1/4 teaspoon red liquid food coloring

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a large bowl, cream the butter and sugar. Beat in the egg yolk and vanilla. Combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well.

Divide the dough in half and add the extract and red food coloring to one section.

Take four sheets of wax paper and roll out each portion of dough between two sheets. Roll dough into a 16x10-inch rectangle. Remove waxed paper.

Place the red rectangle over plain rectangle and roll up tightly (jelly roll style), starting with a long side. Wrap in plastic wrap. Refrigerate overnight or until firm.

Unwrap the dough and cut into 1/4-inch slices. Place 2-inches apart onto prepared baking sheets. Bake for 12 to 14 minutes or until set. Cool completely.

Makes 48 cookies.

1 cup butter, softened

1 1/4 cups sugar

1 egg

2 1/2 cups all purpose flour

1 1/2 teaspoons baking soda

3/4 cup red and/or green candied cherries

Directions

Preheat oven to 350 degrees.

In a large bowl, cream together the butter and sugar. Add in the egg; mix well.

In another bowl, combine the flour, baking soda and salt; add to the creamed mixture; mix well. Stir in the pecans and candied cherries.

Shape dough into four 8-inch rolls and wrap in plastic wrap. Refrigerate for 4 hours or more or until firm.

Unwrap the dough and cut into 1/8-inch to 1/4-inch slices. Place 2-inches apart on ungreased baking sheets. Bake for 7 to 8 minutes or until lightly browned and the edges are set. Cool completely.

Makes 156 cookies.

2 cups all purpose flour

2/3 cup packed brown sugar

2/3 cup cold butter

1 cup chopped walnuts

Directions

Preheat oven to 350 degrees.

In a bowl, combine the flour and brown sugar; cut in batter until the mixture resembles coarse crumbs. Stir in the walnuts. Reserve 1 cup. Press the remaining crumbs into the bottom of an ungreased 13x9x2-inch baking pan. Bake for 12 minutes.

Meanwhile, in another bowl, beat cream cheese and sugar until light and fluffy. Add in the eggs, one at a time, beating well after each one. Beat in the milk, lemon juice and vanilla; pour over crust. Sprinkle with reserved crumbs.

Bake for 25 to 30 minutes longer or until the edges are lightly browned and the filling is almost set. Cool and cut into bars. Garnish with cherries. Store in refrigerator.

Makes 24 bar cookies.

Aromatherapy Foods - Brown Sugar Chocolate Chip Cookies Made With Pure Peppermint Oil

This Aromatherapy Foods(TM) recipe made with pure essential oils makes very flat, crispy chocolate chip cookies. They will spread a great deal on the pan while baking. If you enjoy cookie pieces these cookies are ideal for cutting into bite sized bits before they have a chance to cool. Or you can remove them immediately from the baking sheet and allow to finish cooling on a rack.

Brown Sugar Chocolate Chip Cookie Recipe Ingredients

Half pound (2 sticks) unsalted butter, room temperature, plus some for baking sheet
2 cups packed brown sugar
1 cup granulated sugar
4 eggs
2 teaspoons pure vanilla extract
2 - 6 drops pure organic peppermint essential oil
3 cups all-purpose pastry flour
1 teaspoon salt
1 teaspoon baking soda
1 - 2 cups chocolate chips

Preparation and Baking Directions

Preheat oven to 375 degrees. Line two baking sheets with parchment; set aside.
Into small bowl cream butter until smooth, add sugars, and beat until smooth. Beat in eggs, vanilla and peppermint oil. Into a large bowl, sift together dry ingredients. Slowly stir dry ingredients into wet ingredients. Fold in chocolate chips.
Drop 2 tablespoons of dough per cookie onto baking sheet; space dough 2 inches apart to allow for spreading. Bake until golden, 8-10 minutes. Remove cookies immediately and allow to cool.
Makes sixty 3-inch cookies.
