Brrrrr! Warm Your Home by Baking Cookies - Angel Pillow Cookies!

With our country in the deep freeze, children home from school, and a chill throughout the house, now is the time to bring out the flour, sugar, etc and bake up a batch of cookies. Just the name Angel Pillow Cookies is enough to brighten your day. Let the kids who are trapped inside help you bake and frost these delicious little gems. The recipe calls for apricot jam but you can substitute whatever you have on hand. After all, who wants to go out in the cold to buy apricot? Not me!

ANGEL PILLOW COOKIES

Cookie Bake

1/2 cup butter flavored shortening
1 pkg (3-oz) cream cheese, softened
1 tbsp milk
1/4 cup firmly packed brown sugar
1/2 cup apricot preserves
1 1/4 cups all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp salt
1/2 cup coarsely chopped pecans

Preheat oven to 350 degrees. Spray spray baking sheet with nonstick cooking spray; set aside.

Cream shortening, cream cheese, and milk in a medium mixing bowl at medium speed of electric mixer until well blended. Beat in the brown sugar and the preserves. Combine the flour, baking powder, cinnamon and salt. Mix the flour mixture into the creamed mixture. Stir in nuts.Drop two level tablespoonfuls of dough into a mound for each cookie. Place 2-inches apart on baking sheet. Bake at 350 for 14 minutes. Cool on baking sheet 1 minute then removing to wire racks to cool. Cool completely then frost with the frosting recipe below.

FROSTING:

1 cup powdered sugar
1/4 cup apricot preserves
1 tbsp butter flavored shortening
flaked coconut, chopped

Combine the powdered sugar preserves and shortening in a small mixing bowl. Beat with electric mixer until well blended. Frost cooled cookies. Sprinkle with coconut.

Tasty and Simple Cookie Recipes

Cookies can be produced through simple cookie recipes or through intricate baking techniques.

Nevertheless, all of those various techniques produce hearty and tasty treats. Everyone loves cookies, don't they?

Recipes for Cookies with Chocolate: Chocolate Chip Biscotti and Chocolate Dipped Oatmeal Cookies

This cookies give you a touch, not an over abundance of chocolate.  These cookies are for those who like a touch of chocolate but aren't die-hard chocoholics.  The Biscotti is perfect with a cup of hot chocolate or a cup of coffee or hot tea.  The Chocolate Dipped Oatmeal Cookies are great for an after school snack with a glass of milk.

MILK CHOCOLATE-ALMOND BISCOTTI
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup chopped almonds
2 eggs
1/2 cup sugar
1 tsp vanilla extract
1/2 tsp almond extract
1 cup miniature milk chocolate chips
Preheat oven to 350 degrees. Line 2 baking sheets with foil; grease foil.
In a medium bowl, mix together the flour, baking powder, salt, and almonds; set aside.
In a large mixing bowl, beat eggs and sugar on medium speed of electric mixer until blended. Add the vanilla and almond extracts. Gradually beat in the flour mixture then stir in the chocolate chips.
Shape the dough into two 12-inch logs on one of the prepared baking sheets. Bake at 350 degrees for 20 minutes. Remove from oven and cool slightly. Using a serrated knife, cut logs into 1-inch slices. Place slices on baking sheet and return to the oven for 10 minutes. Turn slices and bake another 10 minutes or until golden brown. Remove to wire racks to cool.

5 Superb Chicken Recipes

ORIENTAL CHICKEN WINGS
6 chicken wings
1 sm. clove garlic
1 scallion
1/4 c. soy sauce
2 tbsp. honey
2 tsp. rice-wine vinegar
1/2 tsp.g rated ginger
1/2 tsp. oriental sesame oil
Pinch of cayenne
1 tsp. sesame seeds
1 tbsp. chopped fresh coriander or parsley
Remove wing tips and cut wings in half at the joint. Mince garlic and scallion. Combine soy sauce, honey, vinegar, garlic, ginger, oil and cayenne in a microwave safe dish.
Add wings and turn to coat. Marinate at least 30 minutes, turning twice. Put larger wings at the edge of the dish. Cover with plastic and vent. Microwave on high for 5 minutes.
Rotate plate and cook 5 minutes longer. Transfer wings to a serving plate. Return marinade to oven and cook, partially covered on high for 2 minutes. Pour marinade over wings and turn to coat. Sprinkle with sesame seeds, scallion and coriander.

Great Cookie Recipes! Golden Chocolate Treasures and Cherry Nugget Cookies

Cookies are great for picnics in the summertime and they are great in the lunchbox for work or school. Add these cookie recipes to your files. Golden Chocolate Treasures Cookies is basically a variation on the well loved chocolate chip cookie. The Cherry Nugget Cookies contain a favorite; cream cheese. Both of these cookies would work well for either picnics, lunchboxes, or just as a snack with the family.

GOLDEN CHOCOLATE TREASURES COOKIES

Cookie Bake

1 1/2 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
3/4 cup butter, softened
1 egg
1/2 tsp vanilla extract
1 1/2 cups Semi-Sweet Chocolate Treasures baking pieces
1 cup coarsely chopped pecans

Preheat oven to 375 degrees. In bowl, combine flour, baking soda, and salt; set aside. In a mixing bowl, beat sugar, brown sugar and butter until creamy, approximately 3 to 5 minutes. Add egg and vanilla to the sugar mixture; mix well. Gradually blend in flour mixture. Stir in the chocolate treasures and pecans. Drop by rounded tablespoons onto ungreased cookie sheets. Bake 8 to 10 minutes. Allow to cool two minutes before removing from cookie sheets. Cool completely on wire racks.

Yield: approx. 20 cookies

CHERRY NUGGET COOKIES

1 cup shortening
3-oz cream cheese
1 cup sugar
1 egg
1 tsp almond extract
2 1/2 cups flour
1/4 tsp baking soda
1 1/3 cups chopped nuts
Large jar of maraschino cherries

Preheat oven to 350 degrees.

In a large mixing bowl, combine the shortening, cream cheese and sugar until well combined. Add egg and almond extract; mix in well. Mix flour and baking soda together and add gradually to the shortening mixture. Cover dough and chill. Drain cherries and cut in halves. When dough is thoroughly chilled, roll into balls. Roll the balls in the chopped nuts. Place balls on a very lightly greased cookie sheet or line cookie sheet with parchment paper. Place a cherry half in the center of each cookie. Bake at 350 degrees about 16 minutes or until barely browned.

Baking Christmas Cookies

As kids, as adults, we all love cookies. It's probably one of the favorite desserts of people of all ages. And while cookies are certainly great all year round, there is just nothing like those couple of days before Christmas when mom starts making the Christmas cookies. This is a time of year when cookies take on a whole new meaning.

Christmas is a magical time, especially for children. We all gather around eagerly to set up the Christmas tree. There isn't enough tinsel and ornaments to cover our masterpiece of nature. And after the tree is trimmed and we eagerly await Santa Claus, what do we do? We put out a plate of Christmas cookies for Santa to take with him on his way out. Of course what we don't tell our kids is that in the middle of the night we wake up, nibble on the cookies and leave just enough crumbs so that the kids know that Santa was there.

Then of course there's Christmas Day and the week following when we have about 6 tins of these treats to munch on. This is our excuse to have cookies at breakfast, lunch, dinner and at every chance we get during the day. Snack time takes on a whole new meaning during the Christmas season. And what about these cookies? How many different kinds do you think there are? Well, there are probably more kinds of Christmas cookies than you can imagine.

There are of course your traditional Christmas cookie shapes. These come in the form of candy canes, Santas, stars and just about any kind of shape that you can associate with the Christmas season. And the cookies themselves are made from various ingredients. You have your plain old sugar cookies, chocolate, nuts, cinnamon and the list goes on and on. Most of these cookies are made out of molds that you can buy at just about any baking goods store. They're pretty common.

Then you have your not so traditional Christmas cookies. This is where people get to be a little more creative and yet still add that Christmas touch. These can range from something as simple as a jelly cookie with small gum drops in the center to something as elaborate as the ever popular seven layer cookie, made up mostly of chocolate. These cookies would put a diabetic into a coma, but they are sure good.

The truth is, the kind of cookies you could make at Christmas time are limited only by your imagination. And if you've got a lot of little kids in the house, you're going to need quite a bit of that imagination. Nobody wants to eat the same old candy cane cookies day after day. So make sure you whip up at least 5 or 6 different varieties of cookies if you want to keep everybody happy. After all, a happy family is what Christmas is all about. Yes, Christmas is a magical time and Christmas cookies are a big part of that magic.

Method Madness - Baking Methods Explained

Ever notice the different procedures when baking cookies, muffins, and biscuits? Even cakes have their own particular method. Why do I cream the butter with the sugar when making cookie dough? Why shouldn't I completely mix the muffin batter until it's smooth and creamy? Why must this be so difficult!? WHY?

Ok, so I'm overreacting a bit. Just a little.

Cookie Bake

There are reasons for the madness and I'm here to explain a few things. I'll even share a few tips on how to make your cookies and cakes taste even better.

First off, baking is a process and takes patience. This is why many chefs don't like to bake. They don't have the patience to measure out the ingredients and to mix things properly. It actually matters, especially when it comes to cookies, muffins, quick breads, and cakes. I'm one of those rare chefs that loves to bake, which is probably a reason there are so many baking recipes stacked a mile high in my kitchen.

Cookie Method:
Cream the butter and sugars together. Sift the dry ingredients together. Add eggs one at at time. This process evenly distributes the ingredients. With cookies, you don't worry too much about rising or having an "airy" cookie.

Muffin Method:
Sift together the dry ingredients (including sugar). Mix together the wet ingredients. Mixing the two together until just mixed (slightly lumpy batter). Over mixing causes tunneling. What's tunneling? Glad you asked. If you over mix the batter, holes and spaces are created in the muffin. That's tunneling. A good muffin will have a slightly raised dome, nice and round, not pointed. Use this method for making pancakes and they will turn out light and fluffy.

Cake method:
This depends on the cake you are making. Angel food is different than baking a white cake. Suffice it to say, what you are achieving in baking a cake is getting air incorporated in the batter giving it a delicate texture. A basic yellow cake is mixed according to the "2 stage" method. This means the liquids are added in 2 different stages. First you cream the fat and sugar together; then add the eggs. Next you add the dry ingredients (sifted together) alternately with the milk. Depending on the cake, sometimes the eggs are added in the 2nd stage with the milk. When making an Angel food cake, egg whites are folded in at the end.

Biscuit method:
Cold butter/fat and liquid. Cut in the fat into the dry ingredients. Moisten the mixture with liquid until wet enough to form a dough. Don't over mix in order for the butter to stay as small lumps throughout the dough causing it to steam and forcing the dough to rise.

Tips:
When baking cookies, muffins, and cakes, make sure the butter and eggs are at room temperature. Recipes usually specify the butter to be softened (room temp) but rarely the eggs. Making sure the eggs are at room temperature will produce a better result. Cold eggs hitting warm butter causes the butter to congeal no matter how fast you mix it. It produces a greasy product -- not exactly what you want. Separate eggs when they are cold. Whip egg whites when they are at room temperature. Use unsalted butter only. You never know how much salt goes into the salted butter. Preheat the oven. Be patient. Allow it come up to temperature. And -- don't open the door all the time to check on your yummy baked goods, either. You're letting heat out! Patience. Remove muffins and cookies from the pans within the first 5 minutes after removing from oven. This prevents sogginess. Using racks to place the cookies or muffins (or cakes) will allow for even cooling.To sift or not to sift: I admit to not always sifting, but rather whisking the dry ingredients together. This is fine when it's cookies or muffins and you aren't in some competition. However, when it comes to delicate cakes, sift the flour. It will aerate the flour and help it to mix into the batter better. Does size matter? Yes. I'm talking about the eggs, of course. Get your head out of the gutter. Geez. Large eggs work the best in most recipes. Use the extra large, jumbo, or small for making omelets or scrambled eggs.
Measuring:
Scoop and sweep method for flour. Scoop the flour into the measuring cup and sweep the top the back of a knife. Packed method for brown sugar. The most accurate way to measure dry ingredients is to weigh them. Professional bakers use scales. A cup of flour and a cup of sugar do not weigh 8 ounces nor do they weigh the same amount. The only two ingredients that weight the same as their volume are butter and water. 1 cup of butter weighs 8 ounces. Just so you know. Most recipes are written for the home cook. Always measure wet ingredients in a wet measuring cup. Dry ingredients get measured in standard measuring cups. Easier and more accurate.

Baking With Agave Nectar - Chocolate Chip Cookies

Baking with agave nectar (instead of granulated sugar) is as easy as pie, if you adjust to a few simple facts.
Agave is 1.4 times sweeter than sugar It adds additional liquid to the recipe It browns quicker than a recipe with sugar It also makes the batter a bit stickierLet's look at a standard chocolate chip cookie recipe and see what we need to change if we want to bake it with our natural sweetener.

3/4 cup sugar
3/4 cup packed brown sugar
2 sticks (1 cup) butter, softened
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup chopped pecans or walnuts (optional)

Cookie Bake

First, we want to replace the 1 1/2 cups of refined sugar, of course. I recommend using 1 cup (it's sweeter than sugar, remember?) of amber agave to compensate a little for the loss of the brown sugar flavor.

Secondly, we need to re-thicken the batter because of the extra liquid from the agave syrup. So, let's increase the flour to 2 1/2 cups.

Next, turn down the oven temperature by 25 degrees. Cookies are normally baked at 375 degrees F, but since agave sweetened baked goods brown faster, we want to bake them in a slightly "slower" oven.

And finally, make sure your cookie pans are lined with parchment paper and sprayed well.

Chocolate Chip Cookie Recipe With Agave Nectar

1 cup amber agave nectar
2 sticks butter, softened
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup chopped pecans or walnuts (optional)

I'm sure you know the procedure for mixing a cookie dough, but just in case...

1. Beat the agave, butter, eggs and vanilla by hand or in an electric mixer until creamy and fluffy.

2. Sift together the flour, soda, and salt, and blend it thoroughly with the creamed mix.

3. Fold the chocolate chips and optional nuts into the batter.

4. Bake it off at whatever size you like. (I prefer 8-inch cookies. But, I'm a glutton!) Check your oven after 8 minutes or so. It shouldn't take much longer than 8-10 minutes.

Note: Baking cookies with agave nectar will result in a softer, moister end product.

How to Make Old Fashion Ginger Cream Cookies

There's nothing quite like good old-fashioned homemade cookies.  In the lunch box, on picnics, for after school snacks or just to munch on because you want to, homemade cookies are a special treat.  Go back in time and make some cookies using this recipe from grandma's recipe box.  And get the children involved in the kitchen with you.  Take advantage of the time to talk to them about older or deceased family members turning your baking session into a history lesson.  Wanda's Ginger Cream Cookies are made with molasses and are iced.  Children especially love to ice cookies.

WANDA'S GINGER CREAM COOKIES
1/4 cup soft shortening
1/2 cup sugar
1 small egg
1/2 cup molasses
1 tsp soda
1/2 cup hot water
2 cups flour
1/2 tsp salt
1 tsp ginger
1/2 tsp ground cloves
1/2 tsp cinnamon
Mix shortening, sugar, egg, and molasses. Stir in soda which has been dissolved in the hot water. Sift together flour, salt, ginger, cloves, and cinnamon and add to the other ingredients. Chill dough. Drop onto lightly greased cookie sheet. Bake until set (when lightly touched with the tip of your finger, almost no imprint remains). While slightly warm, frost with the following icing.
Modern Day Tip:  Spray the measuring cup with nonstick cooking spray before measuring the molasses.  This makes it much easier to get the molasses out of the measure.

Easy Bake Oven Recipes For the Whole Family to Enjoy!

Easy bake ovens are very famous among families and children since its inception in 1963. Their models have gone through immense development and are the best ovens used today. Frosting is another favorite dish of children as they are different from cakes. In this case 2 cups of powdered sugar, 3 tablespoons of milk powder, half cup of unsweetened cocoa powder and 6 spoons of vegetable shortening is used. After mixing all these contents in is blended with pastry blender and cut in shortening. The same procedure said above is followed to make the final cookies.

For making cookies the cookie mix is made by mixing 1 1/2 cups Quick-cooking Oats, 1/4 teaspoon Baking Soda, 3/4 cup of packed Brown Sugar and 3/4 cup Flour. It is mixed with pastry blender and cut shortening with 1/2 cup Vegetable Shortening. You can add chocolate chips, raisins, nuts etc to them according to your interest.

For brownies 2 1/2 tablespoons Sugar, 1 teaspoon Vanilla, 1 teaspoon Vegetable Oil, 1 tablespoon Flour, 2 teaspoons Flour - plus and 4 teaspoons Chocolate Syrup are mixed together to form batter. It poured in greased pan and baked in preheated oven for 15 minutes.

The Best Homemade Chocolate Chips Cookie Recipe

My big family loves chocolate chip cookie so much that we make batches of if on most weekends and special occasions. Everyone simply loves them that they disappear very fast during family events. We have our own special recipe which has become a tradition we all cherish, and I call this the best chocolate cookie recipe ever. This makes more than 5 dozens of chocolate chip cookies.

You will have fun with this recipe which you can choose to modify to your personal taste. So, to get started, you need to prepare all the ingredients.

Cookie Bake

You will need:

1 cup pure butter 3/4 cup brown sugar 3/4 cup granulated sugar 2 cups all-purpose flour or your favorite cake mix 2 cups semi-sweetened chocolate chips 1teaspoon baking soda 1 teaspoon salt 1 1/2 teaspoon vanilla 2 eggs

Directions:

1. Preheat oven to 375 degrees.
2. Dissolve butter. Add the granulated and brown sugar.
3. In a large mixing bowl, beat all ingredients until thoroughly combined.

3 pounds chicken wings

Cherry Recipes in Honor of Our First President, George Washington

Bring some history into your kitchen. Get the kids in the kitchen to help you bake some cherry treats. As you work together, talk to them about the early history of our country and our first President George Washington. This can lead to even more talks about our history. Don't leave it to the schools to teach your children the history of their country. Unfortunately, many of today's textbook don't even have the correct information in them. Let your kids learn from you as you build up our country in their eyes. Most kids like to bake cookies and these Chocolate Cherry Cookies would be a good project for you as they are simple and made from a cake mix. And they are diabetic friendly so even the diabetic children (of all ages) can enjoy them. Or you can use a regular chocolate cake mix for regular cookies. Tiny Cherry Cheesecakes are also a delicious choice and they are also diabetic friendly. However they, too, can be made regular by replacing the Equal with sugar. These tiny cheesecakes have a chocolate crust and who doesn't love chocolate and cherries together? And speaking of chocolate, how about some Oh-So-Easy Cherry Brownies?

CHOCOLATE CHERRY COOKIES

Cookie Bake

1 (8 oz) pkg sugar-free chocolate cake mix

3 tbsp skim milk

1/2 tsp almond extract

10 maraschino cherries, rinsed, drained and halved

2 tbsp white chocolate chips

1/2 tsp canola oil

Preheat oven to 350 degrees. Spray baking sheets with nonstick cooking spray; set aside.

In a medium mixing bowl, beat cake mix, milk and extract with an electric mixer at low speed. When mixture looks crumbly, increase speed to medium and beat 2 minutes or until smooth dough forms. (Dough will be very sticky.) Coat hands with cooking spray and shape dough into 1-inch balls. Place balls 2 1/2 inches apart on baking sheets. Flatten each ball slightly. Place cherry half in center of each cookie. Bake 8-10 minutes or until cookies lose their shine and tops begin to crack. DO NOT OVERBAKE OR COOKIES WILL BE HARD WHEN COOLED. Remove to wire racks and cool completely.

Place chips and oil in a small microwave-safe bowl and cook a few seconds at a time, removing and stirring until chips are melted. Drizzle over cooled cookies. Allow drizzle to set before serving.

TINY CHERRY CHEESECAKES

Crust: 1 cup all-purpose flour

1/3 cup Equal-Lite

1/4 cup cocoa powder

1/2 cup cold butter

2 tbsp cold water

Filling:

6 oz cream cheese, softened

1/4 cup Equal-Lite

2 tbsp milk

1 tsp vanilla extract

1 egg

1 can sugar-free or lite cherry pie filling

Preheat oven to 325 degrees. Grease 24 mini-muffins cups and set aside.To make crust: In a small mixing bowl, combine flour, Equal and cocoa. Cut in butter until crumbly. Gradually add water, mixing with a fork until mixture forms a ball. Divide dough and shape into 24 balls. Place in prepared miniature muffin tins and press dough onto the bottom and up sides of each muffin cup.

To make filling: In a mixing bowl, beat cream cheese and Equal until smooth. Beat in milk and vanilla. Add egg; beat on low just until combined. Spoon approximately 1 tablespoonful into each muffin cup. Bake for 15-18 minutes or until set. Cool on a wire rack for 30 minutes. Carefully remove from pans to cool completely. Top each cake with a dab of pie filling before serving. Store in refrigerator.

OH-SO-EASY CHERRY BROWNIES

If you are a fan of Black Forest Cake, you will love these cherry brownies.

1 pkg. (21.5 oz) brownie mix

1 cup cherry pie filling

1/4 cup oil

2 eggs

1 1/4 cups chocolate chips

Combine brownie mix, pie filling, oil, and eggs together and mix well. Grease bottom only of a 13" x 9" baking pan. Pour batter into pan. Bake at 350 degrees for 30 to 35 minutes until done. After removing from oven, sprinkle with the chocolate chips and spread when they melt. Cool and cut into squares. To make a tasty and pretty serving, top brownie square with a scoop of vanilla ice cream and a spoonful of the leftover pie filling.

Baking Cookies in the Jewish Home

During the Jewish Holidays there are frequent visits from relatives, family, neighbors and friends and baked goods are often served or left on the table. Many bakers find cookies to be the most convenient to prepare and serve because they keep well and are always ready when needed.

Chocolate chip cookies are a favorite among Jewish bakers. They are easy to make, are very versatile, and can be made in advance. Because dairy products may not be eaten directly after a meal containing meat or poultry, cookies and other desserts are often prepared with nondairy ingredients. Since there are so many new alternatives to milk and other dairy products, it is easier to create delectable baked goods that can be enjoyed anytime.

Cookie Bake

Here is one of the classic non-dairy Jewish recipes for chocolate chip cookies.

Chocolate Chip Cookies

1 cup margarine

1/2 cup sugar

1 1/2 cups firmly packed brown sugar

2 large eggs

2 teaspoons vanilla

2 1/2 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

24 ounces semi-sweet chocolate chips

1/2 cup walnuts (optional)

Preheat oven to 350. Grease cookie sheets and set aside.

Cream together the margarine and sugars until light and fluffy. Add the eggs, one at a time. Then add the vanilla.

stir together the flour, baking powder, baking soda, and salt.

Gently mix in the dry ingredients until just blended.

Fold in the chocolate chips (and nuts, if using).

Drop Tablespoons of dough onto the greased cookie sheets, an inch apart, and bake approximately 7-9 minutes.

If soft cookies are desired, take them out of the oven a little earlier than you normally would. They may still look raw in the center (outer edges should be baked completely) but they will continue to bake while one the baking sheet. Let them sit on the baking sheet for 2 minutes and then remove to cool completely on a cooling rack.

For firmer cookies, allow to bake until they are completely done (about 9 minutes) and then remove as above.

*Please note that because most ovens work differently, cookies should be checked at the minimum time. Larger cookies will take longer, smaller cookies will baker in a shorter amount of time. The outer edge of the cookies should be lightly browned when baked.

1 1/2 c crisp rice cereal

1 c miniature marshmallows

1 tb shortening

Make one recipe brownies from basic cookie mix. Bake for 25 minutes. Remove from oven. Evenly sprinkle miniature marshmallows over brownies. Return to oven. Bake 5 additional minutes. Remove from oven; cool in pan.

Combine peanut butter chips and shortening in the top of a double boiler over hot, not boiling water. Stir until melted. Add the
rice cereal; stir until thoroughly coated. Spread over top of marshmallows. Cool until set. Cut into squares.

Makes 16

>> Chocolate-Raspberry Brownies

1 1/4 c unbleached all purpose flour

1 c chopped toasted walnuts (about 4 oz)

1 c (2 sticks) unsalted butter

1 t baking powder

1/2 t salt

1/2 c raspberry preserves

2 c sugar

2 t vanilla extract

4 lg eggs

5 oz unsweetened chocolate, chopped

Butter 13x9x2-inch baking pan. Melt butter and chocolate in heavy
large saucepan over low heat, stirring constantly until smooth.
Remove from heat. Whisk in sugar, then eggs and vanilla. Mix flour,
baking powder and salt in small bowl. Add to chocolate mixture and
whisk to blend. Stir in nuts. Pour 2 c batter into pan.

Freeze until firm, about 10 minutes. Preheat oven to 350'f. Spread preserves over brownie batter in pan. Spoon remaining batter over. Let stand 20 minutes at room temperature to thaw bottom layer. Bake brownies until tester inserted into center comes out clean, about 35 minutes. Transfer to rack and cool. Cut brownies into squares. (Can be prepared 1 day ahead. Store in airtight container at room temperature.)

Our youth group at church wants to lift money for a visit that the members need to make. The journey is to attend a youth rally in the neighboring state. The trip may even embrace an in a single day stay at a big water park near the rally sight. We have already finished some fund raising; but we try to give you new ideas. We have already had a bake sale. This was a very good money maker, however we did not know if another one in a short time can be effectively received. One lady recommended that we make up cookie present containers for the holidays.
This gave the impression of an attention-grabbing idea. The girl explained that the cookie gift containers may embody what ever number of cookies we would choose and the packing containers might be as elaborate or easy as we wanted to make them. People would purchase the cookie gift packing containers to offer as items or to set out for guests. We determined that we wanted to do this. The youngsters have been excited as a result of most of them get pleasure from making cookies. We had several weekends earlier than the holidays so we thought we'd start with totally different sizes of the cookie reward boxes. One dimension would function an assortment of two dozen cookies and the larger size would have 4 dozen. We decided to have three types of cookies. We selected spritz, because several group members had the cookie presses and they're simple and inexpensive to make. Filbert balls as a result of they give the impression of being good without having to decorate and the traditional cut out cookies. The youngsters wanted the reduce out cookies so they could have a frosting social gathering in the fellowship area. We wish to hold the fund raising activities fun so we agreed to the frosting party.

We purchased a number of ornamental containers that had vacation themes after which several plain white containers that could possibly be decorated by the youth group members. We had priced holiday cookie trays on the local grocery store and bakery and found that they charged over $3.00/dozen. We thought this was expensive however as a result of this was a fund raiser we decided we might charge $8.00 for the small field and $15.00 for the larger box. We thought that we might drop the value the second weekend if they didn't sell.
The cookie reward boxes had been an enormous success. We offered out in minutes the first weekend and had people requesting to be placed on an order checklist for the second weekend. Along with selling the cookie present containers we positioned a donation basket by the pay station. By the tip of the third weekend we had raised sufficient money to pay for the rally and water park prices, with extra cash left over for the following event.

Easy No-Bake Recipes for Families

Every parent knows just how much their children love to help out in the kitchen. As children begin to strive toward their independence, parents are still a bit leery in the kitchen as they want to avoid any burns. There are many easy no-bake recipes for families that promote bonding as well as providing a yummy snack.

This simple cookie is the first recipe to try out. The needed ingredients are as follows: 2 cups or 12 oz semi sweet chocolate chips, 2 cups of butterscotch chips (peanut butter chips can be used as well as long as allergies are not an issue), ½ teaspoon of vanilla, and 3 cups of chow mien noodles. A cup of peanuts or walnuts can be added in as well depending on preference. Once all of the ingredients are gather, melt the chips in the micro wave and mix the noodles in until they are well coated. Once that has been mixed, drop the mixture onto wax paper by the teaspoon. After all of the mixture has been placed on the wax paper, set it into the fridge until it has hardened.

Cookie Bake

The next fun and easy no-bake recipe is called "frogs." This recipe will yield 36 "frogs." The ingredients needed are as follows: ½ cup of cocoa, ½ cup of milk, ½ cup butter, 2 cups of granulated sugar, 1 teaspoon of vanilla extract, 1 cup of flaked coconut, and 3 cups of quick-cooking rolled oats. After the ingredients have been gathered line two baking or cookie sheets with waxed paper. Once this has been done, on the stove top in a large saucepan, stir the butter, milk, sugar and cocoa. Bring to a boil and continue to boil for 5 minutes and then remove from the heat. Make sure to turn off the burner to avoid injury. Next, stir the oats, coconut and vanilla extract in the "sauce" and combine well. Once the mixture is blended well, drop it by the tablespoon full onto the pre prepared baking sheets. Place in the fridge for an hour or until it has been well set. Make sure to keep these treats refrigerated.

The last easy no-bake recipe is peanut butter balls. To make this treat the following ingredients are needed: ½ cup honey, ½ cup of peanut butter, 1 cup of nonfat dry milk, 1 cup of quick cooking oats and wax paper. This recipe will yield 24 total peanut butter balls. After the ingredients have been gathered, mix them well and from there roll 1-inch balls out of the mixture. This is as fun as playing with kids' clay. Place the peanut butter balls onto the wax paper and place in the fridge until they have set.

These no-bake recipes are very easy to make and require minimal ingredients. Some ingredients may already be on hand in the kitchen. Give a child an extra-large bowl to mix the ingredients for these recipes and there is less likelihood of creating a mess on your table.This is a great idea for a family night or the holidays.

What To Look For In A No-Bake Cookie Recipe

When it comes to cookie recipes, there are certain "must have" ingredients that make the whole thing possible. You've got a binder of some sort, usually flour, that holds the assemblage together. You've got a fat of some sort, that adds moistness and flavor and helps in the browning and cooking. There will usually be a leavening agent, to make the cookie puff up and look right and eat properly. And, of course, you'll have a flavoring of some sort, running the gamut from peanut butter and chocolate chips to more exotic things like anise or poppy seed. The no-bake cookie recipe has some of these, but not all.

First off, very few of the ingredients will be in raw form. Thus, you'll have no raw eggs, very little flour and no leavening agents. Since these cookies will not be baked, eggs would simply make the no bake cookies dangerous, and leavening agents wouldn't have the heat they need to work properly.

Cookie Bake

You may find other cookies or baked goods actually used as flour would be used in a regular cookie recipe. For instance, vanilla wafer cookies, ground or chopped, are often used as the binder for shaped items like baseball cookies.

Even if cookies are not used to make the cookies, some form of finished product will usually find its way into the recipe. Take haystack cookies, that perennial holiday cookie basket favorite, which use chow mein noodles to form the haystack shape and bind together the peanut butter and butterscotch or chocolate. Graham crackers, with their fairly light flavor and sweet finish, are often used. Some recipes even use powdered sugar as "flour," which makes sense from a structural standpoint.

One thing you'll almost never find is a "lightly sweet" no-bake cookie recipe. Almost all of them are very heavy on the sugar, honey, peanut butter, chocolate or other sweet source. Without the subtle chemical reactions of baking, the sugar has to carry the day.

The Number 1 Method for Great Cookies From Scratch

The idea of great cookies from scratch is what brings people back to their kitchens this time of year. Even people that don't bake for the other eleven months of the year, somehow find themselves back in the kitchen for holiday cookie time.

Whether you have fond childhood memories of baking with Mom or Grandma, want to be sure of the ingredients that go into your cookies, or share time with your children, making cookies from scratch is a great way to accomplish all these things.

Cookie Bake

You'll have more pride making your own cookies than simply slicing the grocery cookie dough log. Creating your own cookie dough is quite simple, but it's not the right recipe that takes your cookies from fair to fantastic, it's the mixing method that does that.

The great majority of cookies are made with a "creaming method". When you master the simple steps of this method, ANY cookie recipe will turn out better.

Steps for the creaming method:

1) Measure all ingredients carefully - This is baking not cooking, and precise proportions are mandatory for arriving at consistently excellent results. Be aware of the difference between weight and volume measurements, and have all your ingredients ready before starting the next steps.

2) Cream the fat and sugar - This is why it's called "the creaming method". Mixing fat and sugar together will add air to your holiday cookies. Air will give you the lightest, crunchiest cookies from scratch.

3) Add eggs - The protein in egg yolks not only act as an emulsifier, binding the usually unmixable fat and liquid, but also give structure to cookies. This is the most important step in your cooking making process and the egg MUST be added very slowly to create the emulsification.

4) Add any liquid - Many cookie recipes don't have any liquid in the formula, so you'll usually be skipping this step. But, if the formula calls for milk or cream, it's added after the eggs.

5) Sifted dry ingredients - Sifting flour, baking powder, baking soda, salt, or seasonings together not only gives a consistent mixture, but also adds air, again giving you a lighter cookie

6) Chips, nuts, raisins - These items are added last because they just need to be mixed in. You don't want to break up all the pecans or chip your chocolate chips with over mixing

Even the best cookies from scratch can still be ruined if you follow the above procedure exactly. While mixing is the most important part of making cookies, portioning and baking can be the destruction of well mixed cookie dough.

Portioning cookies so that they are exactly the same size will allow them to cook consistently. This helps avoid the one cookie that's burned while another is under-cooked on the same tray. Use an ice cream scoop or other portioning device that will accomplish exact duplicates of each cookie.

Making your own cookies from scratch is very simple, and you can gain power over all cookie formulas by having the underlying command of the creaming method.

The Best Chewy Chocolate Cookies

This cookie is a favorite for people who love the great flavor and texture of brownies in a cookie shape. These warm irresistible freshly baked cookies are moist and bursting with chocolate. You find these chewy chocolate cookies taste as good as they look, melting in your mouth one bite at a time. If you find yourself craving something soft and chewy that will satisfied that chocolate lover inside of you then look no more because this is the perfect cookie for you and your family and friends that's if you feel like sharing. Bet you can't just eat one.

Ingredients:

Cookie Bake

1 ¼ cups of butter, softened (you can substitute the butter with butter flavored Crisco)
1 and ½ cups of white sugar
2 eggs
2 teaspoons of vanilla extract
2 and ½ cups of all-purpose flour
¾ cup of unsweetened cocoa powder
1 teaspoon of baking soda
½ teaspoon of salt
2 cups of semisweet chocolate chips

This recipe makes four dozen of cookies and is ready in about 55 minutes but the actually cooking time is about 10 minutes.
So, how do you make the best chewy chocolate cookies?

Preheat the oven to 350 degrees (175 Celsius). Position the rack in the middle of the oven.

In a large mixing bowl, cream together the butter and sugar on medium speed until light and fluffy. Beat the eggs in one at a time until well incorporated and then stir in the vanilla. Sift together the flour, salt, baking soda and cocoa, mix well together until the batter has the consistency of cream. Now it's time to stir in the chocolate chips.

Drop the dough by tablespoons onto ungreased baking sheet (size of golf balls) and space them out as you go (tip: place the dough about 2 inches apart on baking sheet to allow for spreading while the cookies bake)

Bake for 8 to 9 minutes. The chewy chocolate cookies will be soft, let them cool slightly for about 1 or 2 minutes before removing them. Eat'em up while they are warm.

Tips: Remove the cookies off the baking sheet in 1 to 2 minutes after they've cooled, you don't want them sticking to the baking sheet. For best results, bake cookies on the middle rack of your oven. To keep your chewy chocolate cookies moist and chewy, place the slightly warm cookies in a plastic or metal container with a lid or cookie jar.

Christmas Cookie Swap

Hosting a Christmas Cookie Swap is a wonderful way to "kick off" your celebration of Christmas. A Christmas Cookie Swap provides the opportunity to take a break from the holiday rush to share the Christmas spirit with old and new friends.

My friends and I hosted a Christmas Brunch for the occasion of our Christmas Cookie Swap. We scheduled it around the second week of December so that everyone could go home with a variety of scrumptious Christmas cookies to serve throughout the holidays. Each year we rotate the home and the hostesses where the brunch is held.

Cookie Bake

In order to have a successful Christmas Cookie Swap, we offer the following guidelines: (which were included in the invitation)

1. All cookies are to be "homemade," baked and main ingredient is to be flour. No "no-bake" cookies, meringues or bars. Fudge or pralines are ok.
2. It's great to make cookies that freeze well.
3. Please bring 80 total cookies, divided into 40 Ziploc bags of 2 cookies each.
4. The theme is "Christmas Cookies"-no chocolate chip cookies, please.
5. Arrange bags of cookies in a basket or on a platter (be creative).
6. Bring 40 copies of the recipe printed on 8 ½" X 11" (to make individual recipe books.)
7. RSVP as soon as possible to let us know what type of cookies you are planning to bring. We'll try not to duplicate recipes.
8. If you cannot attend but would like to swap cookies, you may deliver your cookies to the host house the day before the brunch. We'll swap them for you.
9. *If you don't have time to bake, or have ruined your recipe, but still want to attend, you can bring cookies from a "real" bakery.

In preparation for the brunch, the hostess prepares brunch food, a bag in which each participant can put her cookies, and a cover and back sheet for the Christmas Cookie Swap Recipe Book. During the brunch, one of the hostesses assembles the recipe books so they are ready to pass out at the end of the activities.

The hostesses also prepare activities for the guests before the cookies are distributed. One activity that all seem to enjoy is for each guest to tell why they chose their cookie recipe to prepare, especially if the recipe has a special meaning, e.g. it was grandmother's favorite sugar cookie recipe.

You may already know that heart-healthy margarine spreads are great for topping foods to give them a tasty, buttery flavor. But did you know that they are good for cooking and baking, too?
To check if a spread is heart-healthy, look for a cholesterol-free soft tub spread that is made from 50 percent to 60 percent vegetable oils, has 2 grams or less of saturated fat and contains no trans fat per serving.
Dana Jacobi, author of the "12 Best Foods Cookbook," offers these tips for cooking and baking with margarine spreads:
* To measure soft tub spread correctly, make sure to level the cup or spoon.
* When sautéing, use medium heat to maintain the flavor and to avoid burning the spread.
* For baking, chill the spread in the freezer before measuring it if the recipe calls for creaming it with sugar.
* When melting a spread for baking, remember that it melts quickly. In the microwave, 3 tablespoons of tub spread melts in 15 seconds, versus 30 seconds for butter.
Now that you know which spreads to choose and how to cook with them, try it for yourself. The following recipe uses a heart-healthy spread and produces perfect results.

DANA JACOBI'S OATMEAL-RAISIN COOKIES
(Makes 36 cookies)

1/3 cup chilled Promise Buttery Spread
1 cup sugar
1 large egg, at room temperature
1 tablespoon mild molasses
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup all-purpose flour
1 1/2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 cup raisins
3/4 cup sliced almonds

Preheat oven to 350 degrees. Line baking sheet with parchment paper and set aside.
Use an electric mixer on medium speed to cream Promise Buttery Spread with sugar until it is pale and fluffy, about 2 minutes.
Mix in egg, molasses, vanilla and salt. Using a rubber spatula, stir in flour, oats, baking soda and cinnamon until almost blended. Add raisins and almonds, mixing gently until ingredients are combined.
Drop the dough 1 tablespoon at a time onto the baking sheet, spacing them 3 inches apart.
Bake for 12 minutes or until cookies are golden brown. Cool for 1 minute on the pan, then transfer to a wire rack and cool completely.  - NU

Four Secrets to Baking the Best Chocolate Chip Cookies Ever

Who doesn't just love the taste of warm Chocolate Chip cookies fresh out of the oven? The next time you'd like to whip up a batch using your favorite cookie recipe, try these four little secrets that will put your cookies over the top in taste.

1. Use Fresh European Butter: Butter is the one of the key ingredients to baking really successful cookies. Never use butter substitutes, they really aren't the same as far as taste goes. European butter has a little more butterfat than regular butter which will give your cookies a richer, more creamier taste. If you can't find European butter, than just make sure you use good quality, fresh butter. Always check the date of your butter that's been sitting in the fridge. If your butter tastes stale, so will your cookies.

Cookie Bake

2. Melt the butter. When the cookie recipe calls for softened butter, I always melt mine in the microwave for about 15 seconds and let it cool just a bit before I add it to the sugar. Because melted butter is both warm and a liquid, it does a much better job of dissolving the sugar while improving the texture of the cookies after they are baked.

3. Add Extra Vanilla: I usually double or even triple the amount of vanilla that a typical recipe calls for (which is usually a teaspoon or 1 1/2 teaspoons) but I usually don't add more than a tablespoon total. Always use pure vanilla extract too, not the imitation vanilla extract. It does cost a little extra but it's so worth it.

4. Find that perfect baking time. When you put your first batch in, take them out at the lower end of the recommended baking time. Cookies will continue to bake when you take the out of the oven, so it's best to remove them earlier than later. You can always cook the next batch for a minute or two longer if you like them a little more golden around the edges. Once you have that "perfect baking time" write it down on your recipe card for future cookie baking.
