Cookie Baking

Baking cookies always reminds me of my mom back in the day, every time I get a waft of that sweet smell, it always brings me back and puts a smile on my face.

Below are recipes and methods for a couple of different cookie varieites:

Cookie Bake

You will need:

classic or Spiced Cookies

Large mixing bowl

Cups and spoons for measuring

Fork for stirring

Flour

Baking powder and soda

Salt

Cocoa powder

Spices(optional)

Butter Melt Cookies

Another large mixing bowl or wash and reuse the other one

A second set of measuring cups and spoons

Food processor

Wooden spoon

Rubber spatula

Butter, margarine and cream cheese

White and brown sugar

Eggs

Vanilla extracts

Raisins, nuts and chocolate chips

Rolled oats

Any other ingredients that are added to the butter and eggs in your recipes

For the novice baker among you, to best avoid transferring flavors from one recipe to another, you need to start with basic recipes that have no spices, chocolate, or other over powering ingredients.

Starting with your first recipe, measure your flour and baking soda into 1 bowl. Then, combine the butter, sugar, eggs, vanilla in another bowl as directed. Gradually mix flour and bking soda into the butter mixture and add any extras.

Next, scrape down the edges of the mixing bowl with the spatula to clear up any excess, shape the dough into a ball and wrap it in cling film. Identify the different recipes by writing the name on the plastic with a felt-tip marker and put it in the fridge.

Common Types of Cookies

Everyone loves home-baked cookies. Nothing is more welcoming than the smell of freshly baked cookies or the sight of them cooling on the counter. It's my favorite kind of aromatherapy.

Cookies have a long history, dating back to 7th Century Persia. By the 1800s, cookie recipes began appearing in cookbooks as 'small cakes.' In fact, the term 'cookie' comes from the Dutch word koekje or koekie which means little cake.

Cookie Bake

Recipes for cookies in a variety of styles and flavors increased in the early 1900s and continues today. Cookies are the most common treat baked in home kitchens and it's estimated that more than half of all home baked cookies are chocolate chip.

But there are a lot more kinds of cookies out there waiting to be baked. Most cookbooks classify them by how they are formed into the following categories or types of cookies:

Bar Cookies, Squares, or Pan Cookies
The quickest and easiest type of cookie to make. Batter or dough is pressed or spread into a pan and cut into bite-size pieces after baking. Brownies are the classic example of a batter-type bar cookie but they come in a variety of styles and flavors.

Drop Cookies
By far the most common type of homemade cookie created by dropping or pushing cookie dough from a teaspoon or tablespoon onto a prepared cookie sheet. Just mix, drop, bake, and enjoy -- definitely an easy cookie type. Popular examples of drop cookies include oatmeal raisin, peanut butter, and chocolate chip.

No Bake Cookies
Another easy cookie, no bakes don't require an oven. They are a great way to introduce kids to the fun of cookie making. Some of my favorite no bake cookie recipes include rice krispie bars, coconut date balls, rum balls, and peanut butter bars.

Ice Box or Refrigerator Cookies
Originally referred to as "ice box cookies," made from stiff dough that is refrigerated and usually formed into a cylinder before slicing and baking. Contemporary cookbooks may categorize refrigerator cookies as sliced or slice and bake cookies. You can keep a log of cookie dough in the refrigerator or freezer then slice, bake, and enjoy a warm, fresh from the oven, homemade cookie whenever a cookie craving strikes.

Shaped Cookies
These cookies are shaped by hand or with molds or extruded from a cookie press or pastry bag. Shortbread is a classic example of a hand shaped cookie. There are also lots of popular holiday "spritz" cookies that require a special cookie press.

Whichever type of cookie you choose to make, friends and family are sure to applaud your efforts.

Favorite Cookie Baking Tools and Equipment

Baking homemade cookies is a lot more enjoyable when you have the right tools and equipment. Here's a list of items that will help insure cookie baking success.

Baking Pans and Cookie Sheets: Come in a wide variety of styles and materials. Dark metal pans absorb heat and will cause cookies and brownies to brown more quickly. Shiny metal pans reflect heat making them perfect for more delicate baked treats. Air-cushioned sheets provide extra protection from burning but make it difficult to obtain golden brown cookies. Glass pans carry heat more effectively so your oven temperature needs to be adjusted down 25 degrees when using them. I prefer dull, light colored heavy duty aluminum baking pans. Basic pan sizes you'll want in your collection include:
9 X 13-inch 8-inch square 9-inch square 9-inch round Cookie sheets with or without sides. Although many books suggest rimless pans for baking cookies, I have had great success using rimmed half sheet pans.
Bowls: Small, medium, and large mixing bowls in glass or stainless steel.

Wooden Spoons: Great for stirring brownies batter

Measuring Spoons: One or two sets of graduated spoons designed specifically for measuring

Measuring Cups: A 2-cup glass or plastic one for liquids that has a spout and a set of dry graduated measuring cups

Spatulas: One thin metal spatula for removing cookies from the pan and a couple of plastic spatulas for scraping cookie dough and brownie batter from bowls into baking pans

Whisks: One or two medium to large whisks for mixing both dry and wet ingredients

Ice Cream Scoops: Small ice cream scoops make easy, speedy work of dropping cookie dough onto pans. They're one of my favorite inexpensive cookie making tools

Microplane: A wonderful tool for zesting and grating zest from citrus fruit and chocolate

Silicone baking pan liners: Make clean-up a breeze and are available in a wide variety of sizes. With a silicone liner you are able to forgo greasing cookie sheets too. Just be sure to not cut them.

Parchment Paper: An indispensable aid for quick and easy baking. Available in both rolls and sheets, I bake all my cookies on parchment lined sheets for the easiest clean-up

Wire Racks: For cooing your cookies and brownies

Electric Mixer: I love my KitchenAid mixers, both hand-held and standing versions, for making brownies and cookies. If you only bake occasionally or have limited space, start with one or the other. If you bake a lot, you will eventually want both.

Food Processor: I am a fan of Cuisinart food processors. They can really speed up the process for many kitchen tasks like chopping, grating, shredding, and pureeing. Get one that has at least a 6-cup capacity.

Four Generations of Yummmmm!

In the small seaside village of Abruzzi, Italy the D'Eliso family woke to a bright new dawn. The year was 1910. Pop D'Eliso looked forward to realizing his life long dream of prosperity that was rumored to abound in the new world. They were on their way to America!





The move was over before the family knew it and they settled in a very modest, two story, brownstone in Pittsburg, Pennsylvania, USA. Many other Italian families had done the same, and so it wasn't long before the D'Eliso family found and joined a local Italian Presbyterian church. The pastor worked tirelessly to provide a refuge where other Italian immigrants could maintain their traditions. Here they formed many solid bonds as, together, they became acclimated to their new surroundings.





It was there, in 1941, in an area known as East Liberty that Pop's middle son, Anthony, met and married the beautiful Columba Faldo. As their family grew they enjoyed the love and traditions that are very much a part of every Italian family. In 1941 Anthony became a baker and cook for the US Army during WWII. After the war ended, in 1943, the call of California was not lost on this soldier boy, turned man. It didn't take long before the D'Eliso family picked up roots and headed to the new "Promised Land". In 1956 with the cry on their lips, "California here we come!" they left Pennsylvania behind.





1961 found Anthony and Columba settled in Whittier, California where they opened the D'Eliso's Bakery. Their daughter, Gloria, and son, Anthony, worked right alongside their parents after school. They assisted with the daily tasks of operating a bakery, working in the kitchen and at the counter as needed. While the family worked side-by-side, in the kitchen baking, the secret family recipes passed from generation to generation. As the young Anthony grew and matured and learned the secrets from his father his love for baking multiplied. As time passed, the elder, Anthony retired and the younger continued on in the baking tradition with the D'Eliso's family bakery.





During the six years that young Anthony was maturing as a baker in his own right, his sister, Gloria, was busy raising a family. It wasn't until after a recent extended family trip to Italy to visit Gloria's grandparent's villages of Abruzzi and Calabria, the family legacy and passion for baking and serving authentic Italian cookies and cakes was once again ignited. The decision was made to fan those flames as the family meandered down the narrow streets of Italy with their youngest daughter, Elizabeth. When once again on American soil they formed My Little Taste of Italy with the promise to bake and serve, with passion, authentic Italian cookies and cakes.





Today, the family owns and operates My Little Taste of Italy, which has become world famous for their authentic treats. When Liz, as Elizabeth came to be known, created her unique recipe for Cappuccino Brownies the news of their rich and creamy, to die for, goodness quickly spread. It wasn't long before Liz's Cappuccino brownies were dubbed "Orgasmic!" by Jan Verhoeff, one of their loyal customers.





Along with the assistance of Gloria's daughter, Liz, and her grandchildren, My Little Taste of Italy fills orders all across the US and has been known to mail their goodies to the soldiers serving overseas as well. Even the smallest, Baby Luke, at a mere 8 months old, was spied with a stirring spoon in his tiny little hand.





They have recently created two new flavors of biscotti that they will packaged in a very unique way for Valentine's Day delivery that can be sent to your soldier as well as to your stateside loved ones. This new offering comes in two flavors; the Grand Marnier dipped in rich, Italian chocolate, and their Spumoni flavored biscotti drizzled with the same. For those that wish to add a little spice to the mix a twist to an old favorite has been created. Florentine cookies have been given a whole new zing with the addition of chocolate chips, espresso beans and cayenne pepper to the standard slivered almonds. Baking Cookies - The No-Stress Guide

Little children are always fascinated by cooking. They watch their mothers cook when they are only knee high. I remember being so impressed with all the smells that came from the cupboard where we kept our spices. Cinnamon, basil, oregano and pepper all smelled so interesting in their little jars. I was amazed that my Mom could gather all these different ingredients from all over the kitchen and create dinner or lunch or even breakfast. Who knew mixing different white powders with an egg and some oil made these delicious things we call pancakes? I always wanted to cook instead of just watch. One day, I finally got my chance when Mom said "we" were making cookies. I got to be a part of the warm gooeyness we call chocolate chip cookies. What I learned then, I'll never forget: cooking isn't hard if you follow the steps in the right order.

First, gather all the ingredients you need. In my house, baking didn't involve cookies that cake from a tube or package. It was a bunch of raw ingredients you buy at the grocery store. So gather whatever you need: eggs, flour, baking soda or powder, salt, butter, perhaps oats, and of course chocolate chips. And plenty of them! Make sure you have everything in the amounts you need. Nothing is worse than getting half way through a recipe and needing to run to the store or begging a neighbor for some eggs.

Cookie Bake

Second, gather any equipment you will need. Back when Mom and I made chocolate chip cookies, all we needed was a bowl, a wooden spoon, some non-stick spray and a cookie sheet. While the method hasn't changed, the equipment has. I use a mixer now. It just blends everything so nicely. And instead of spraying my cookie sheets, I use Silt-pat washable liners. You could also use parchment paper to line your cookie sheets. It doesn't really matter. The star of the show is still the cookies themselves.

Next just follow the recipe. Make sure you are using a teaspoon when it calls for teaspoon. The first time I made cookies, I didn't know the difference between a cup and a teaspoon. If it hadn't been for a quick mom, those would have been the saltiest cookies ever! Always pre-heat the oven. And never over cook cookies! If the recipe calls for eight to ten minutes of cooking time, set the timer for eight minutes and see how they look. Slightly under done cookies are much softer and tastier than their over-done brothers.

Keep rounded tablespoonfuls of dough 3" apart. Place cookie sheet into the center of a preheated 350-degree oven. Bake for 12-12 minutes. Do not over bake. Remove from oven to wire cooling racks. Stores are also selling a do it yourself sealer made by Reynolds that does a wonderful job of vacuum sealing bags for a lower cost than buying a regular sealer, if cost is an issue. That way your cookie dough doesn't get freezer burned and you can just bake a few at a time, rather than have 5 dozen cookies laying around.

9. This one is probably the no-brainer of the bunch...FOLLOW THE RECIPE EXACTLY. Many times cookies do not turn out because a person did not follow their recipe. The person who made the recipe knows how much of dry ingredients versus wet ingredients go together to make a cookie dough that comes out of the oven into edible cookies. Trust them. Do not start substituting ingredients to make it lowfat or reduced sugar or something else, because chances are it will not turn out. Do not substitute applesauce for butter or cake flour for all purpose flour, because they are different densities and it will make your cookie flop. Besides, chances are if you are making cookies anyway... you probably are not caring about lowfat, or low sugar, or anything else except something sweet to eat that tastes good.

You can get the recipe at the end of the paragraph for these cookies. The most cherished memories of my childhood were of the smells of baking delicious cookies. As I would walk in the door on my house from school I could smell the goodness waiting for me. Many times the cookies were not yet iced and I would sneak one away. Of course with now 3 teenagers in the home and their friends stopping by the batch of cookies does not last more than a day but that makes you feel good.





My mom and I still make cookies as we have ladies order 100 dozen or more for themselves to give as gifts to family and friends and they can no longer bake themselves and the cookies remind them of what they use to be able to bake and they still like to give their families home based goodies instead of store bought preservatives.

Baking Cookies - How to Make the Best Cookies Ever!

Baking cookies is a lot of fun. It does take some time to make them, but fresh baked cookies out of the oven can't be beat even by the best gourmet cookie you can buy.

When you walk into somebody's house and there are cookies in the oven, the whole house smells great and inviting. There are some shortcuts that can make it easier to bake your own cookies and i don't mean store bought dough.

Making the Dough
Make sure you have all the ingredients that you need and measure them carefully. Actually, the best thing you can do is get a scale and weigh them, that way you always have the exact same amount.

Use only the best ingredients, such as real butter and fresh eggs. If you are diet-conscious, add ground flax-seeds, nuts and dried fruit for nutrition. You can even substitute applesauce for part of the butter.

Make the dough according to the instructions, but be careful not to mix it too long after adding the flour. Only mix until the flour is incorporated into the dough, otherwise your cookies will be tough.

Baking the Cookies.
Use a high quality baking sheet and cover it with parchment paper. No need to butter it. The cookies will not stick and it is so easy to clean.

After mixing the dough, you can wrap it tightly and keep it in the refrigerator for up to 1 week. When you want fresh cookies, just take out enough for 1 sheet and bake them. Fresh cookies are best within 3 days of making them. If they are soft, put them into a tightly closing container and layer them between wax paper. Should they become hard, just add a slice of bread and leave it in there overnight and they will be soft again.

If you want to make cookies ahead of time, you can freeze them after they are cooled. Put them back on a cookie sheet in a single layer and put the sheet in the freezer. Once they are frozen, carefully put them into a container between wax paper or into a Ziploc bag and you can keep them for 3 months. When you want some cookies, just take out what you want and let it defrost or put it into a low oven for a few minutes and they will taste and smell freshly baked.

When you bake the cookies, be certain that your oven is set on the right temperature. It is a good idea to have an oven thermometer, since ovens can very a bit even if they are brand new.
