Christmas Cookie Recipes - Frosted Gingerbread Nut Cookies

A dressed up gingerbread cookie with frosting and the addition of nuts.

1/2 cup butter, softened

2/3 cup sugar

1 egg

1/2 cup molasses

2 3/4 cups all purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon salt

1/4 teaspoon ground cloves

1/2 cup buttermilk

1/2 cup chopped walnuts

Cookie Frosting

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a large bowl, cream together the butter and the sugar. Beat in the egg and molasses. In another bowl, combine the flour, baking soda, cinnamon, ginger, salt and cloves; add to the creamed mixture alternating with buttermilk. Stir in the chopped nuts.

Drop tablespoons of dough onto the prepared cookie sheets. Bake 10 to 12 minutes, or until cookies spring back after being lightly touched in the center. Let cool.

Cookie Frosting

1 1/2 cups confectioners' sugar

4 1/2 teaspoons butter, softened

1/2 teaspoon vanilla extract

2 to 3 tablespoons half and half cream

Walnut halves, optional

Directions

In a small bowl, combine the confectioners' sugar, butter, vanilla and cream (enough to get desired consistency). Frost cooled cookies. Top with walnut half, if desired.

Makes 60 cookies.

1 cup butter, softened

1/2 cup sugar

1 tablespoon milk

1 teaspoon vanilla extract

2 1/4 cups all purpose flour

Red and yellow paste food coloring

Miniature chocolate chips

Directions

Preheat oven to 325 degrees.

In a bowl, cream together the butter and sugar. Add in the milk and the vanilla; mix well. Gradually add in the flour.

Remove 1/3 cup of the dough and place in a small bowl. Tint this dough with red food coloring. Remove another 1/3 cup of dough from the original bowl and place in a small bowl. Tint this dough with the yellow food coloring. Set aside.

Shape white dough into 24 balls. They should be around 1 1/4-inch each. Make another 24 balls from this dough about 1/2-inch each. Last, shape the remaining dough into 24 1/8-inch balls.

To make the snowmen bodies, place the large balls on two ungreased baking sheets. Flatten each ball to about 3/8-inch thickness. Place the 1/2-inch balls above the bodies to create the heads; flatten.

To make snowmen hats, shape red dough into 24 balls of about 1/8-inch thickness; set aside. Shape 24 pieces of red dough into triangles. Place these triangles on top of the snowmen heads. Place the 1/8-inch white balls onto the end of hats to make little pompoms.

Take the 1/8-inch red dough balls and place onto the snowmen heads for noses.

Divide yellow dough into 24 pieces and shape into scarves. Press scarves into place at bottom of snowmen heads.

Create eyes with the miniature chocolate chips and also use the chips for buttons on their bodies.

Bake for 13 to 16 minutes, or until set. Let cool completely.

Makes 24 cookies.

A wonderful traditional cookie that is always welcome.

1 cup butter, softened

1 cup sugar

2 eggs

1/2 cup light corn syrup

1/2 cup molasses

1/3 cup water

6 2/3 cups all purpose flour

1/4 cup crushed aniseed

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/4 teaspoon ground allspice

Confectioners' sugar

Directions

Preheat oven to 400 degrees.

Prepare baking sheets with nonstick cooking spray.

In a bowl, cream together the butter and sugar. Add in the eggs, one at a time; beating well after each addition.

In another bowl, combine the corn syrup, molasses and water; set aside.

In a large bowl, combine the flour, aniseed, baking soda and spices. Add to the creamed mixture, alternating with the molasses mixture. Cover and refrigerate overnight.

Roll dough into 1-inch balls. Place balls 2-inches apart onto prepared baking sheets. Bake for 11 minutes, or until golden brown. Roll warm cookies into confectioners' sugar. Let cool before serving.

Makes 96 cookies.

Free Christmas Cookie Recipes - Frosted Cranberry Drop Cookies

These cookies have a delightful burst of cranberry flavor.

1/2 cup butter, softened

Cookie Bake

1 cup sugar

3/4 cup packed brown sugar

1/4 cup milk

1 egg

2 tablespoons orange juice

3 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

2 1/2 cups fresh or frozen cranberries, chopped

1 cup walnuts, chopped

Cookie Frosting

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a bowl, cream together the butter, sugar and brown sugar. Add in the milk, egg and orange juice; mix well.

In another bowl, combine the flour, baking powder, salt and baking soda; add to the creamed mixture and mix well. Stir in cranberries and nuts.

Drop by tablespoonfuls 2-inches apart onto prepared baking sheets. Bake for 12 to 15 minutes or until golden brown. Let cool. Frost with Cookie Frosting.

Cookie Frosting

1/3 cup butter

2 cups confectioners' sugar

1 1/2 teaspoons vanilla extract

2 to 4 tablespoons hot water

Directions

In a saucepan, heat the butter over low heat until golden brown in color, about 5 minutes. Cool for 2 minutes. Transfer to a small bowl. Add sugar and vanilla. Beat in water, 1 tablespoon at a time, until the frosting reaches the desired consistency.

3/4 cup butter, cubed

4 squares unsweetened chocolate

2 cups sugar

4 eggs

1 1/2 cups all purpose flour

1/2 cup baking cocoa

2 cups semisweet chocolate chips, divided

2 teaspoons shortening

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a small saucepan, melt butter and unsweetened chocolate over low heat; cool. Transfer to a large mixing bowl.

Add in the sugar and eggs. Beat until smooth. Combine the flour, cocoa, baking powder and salt; gradually add to the chocolate mixture. Stir in 1 1/2 cups of chocolate chips. Cover and refrigerate for 2 hours or until the dough is easy to handle.

Drop by tablespoonfuls 2-inches apart onto prepared baking sheets. Bake for 7 to 9 minutes or until edges are set and the tops are slightly cracked. Let cool completely.

In a microwave safe bowl, heat the shortening and remaining chocolate chips on high for 1 minute or until the chips are melted; stir until smooth. Drizzle over cooled cookies. Let stand for 30 minutes or until the chocolate is set.

Makes 72 cookies.

1/4 cup butter, softened

1 cup packed brown sugar

1 egg

1/2 cup quick cooking oats

1/2 cup apple butter

1 cup all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons milk

1/2 cup chopped nuts

1/2 cup raisins

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a small bowl, cream together the butter and sugar. Beat in the egg, oats and apple butter.

In another bowl, combine the flour, baking soda, baking powder and salt; gradually add to the creamed mixture, alternating with the milk. Beat until well blended.

Stir in the nuts and raisins. Cover and refrigerate until dough is easy to handle.

Drop by teaspoonfuls onto prepared baking sheets. Bake for 15 minutes or until set. Let cool.

Makes 30 cookies.

How to Make Halloween Frosted Sugar Cookies

During the fall season, I enjoy baking some Halloween theme' d cookies to take to various parties or to just keep on hand at my home.

This recipe is simple to make but does take some time since you will be cutting out the cookies, and then frosting them with some orange or black frosting. You can pick up Halloween designed cookie cutters at your local store for about $1.00 a piece. If desired, you could purchase some sprinkles to further decorate your cookies.

Basic Cookie Recipe:

1 cup butter, softened
1 1/2 cups granulated sugar
2 eggs
1 teaspoon vanilla extract
1/8 teaspoon table salt
1 tablespoon cold milk
3 cups all purpose-flour
1 teaspoon baking powder
1 teaspoon table salt

In a medium-sized bowl, combine the flour, baking powder and 1 teaspoon salt, set aside. In a large-sized bowl cream together the softened butter with the granulated sugar. Slowly add in the eggs, vanilla extract, 1/8 teaspoon salt and milk. Stir in the flour mixture until all ingredients are combined. Cover the bowl and refrigerate for 6 hours.

Lightly dust a dough board with flour. Roll out your cookie dough until it is 1/8" thick. You want your dough to be pretty thin. Using Halloween theme cookie cutters, cut out your cookies and place them onto a cookie sheet that has been lined with a nonstick silicone baking mat or a sheet that has been very lightly greased. Bake in a 350 degree oven for 7-8 minutes. Let cookies cool completely before icing them.

Cookie Icing:

2 cups confectioner's sugar
2-3 tablespoons milk, divided
1 teaspoon vanilla extract
orange and black food color

Mix the confectioner's sugar, milk and vanilla extract in a medium sized bowl. Add additional 1 tablespoon of milk until desired spreading consistency is obtained. Separate the mixture into 2 small dishes and tint one of them with orange and one with black food coloring. Spread frosting on cooled cookies and let dry. Once the cookies are completely done, store them in an airtight container.

Cookie Recipes for Christmas - Frosted Peanut Butter Cookies

A jazzed up version of the popular peanut butter cookie.

1 (17 1/2 oz.) pkg. peanut butter cookie mix

2 cups confectioners' sugar

1/4 cup baking cocoa

1/4 cup hot water

1 teaspoon vanilla extract

Sliced almonds or pecan halves

Directions

Preheat oven to 375 degrees.

In a large bowl, prepare cookie dough according to package directions. Shape into 1-inch balls. Place 2-inches apart onto ungreased baking sheets.

Bake for 8 to 10 minutes or until the edges are golden brown. Let cool.

To make frosting: in a bowl, combine the confectioners' sugar, cocoa, water and vanilla. Spread over cookies; top with nuts.

Makes 24 cookies.

1 cup butter, softened

3/4 cup sugar

1/2 cup confectioners' sugar

1 egg

1 teaspoon vanilla extract

2 1/2 cups all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cream of tartar

1/4 to 1/2 teaspoon ground nutmeg

1/8 teaspoon salt

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a bowl, cream butter and sugars. Beat in the egg and vanilla; mix well.

In another bowl, combine the flour, baking soda, cream of tartar, nutmeg and salt; add to the creamed mixture and mix well. Refrigerate for 1 hour.

Shape into 3/4-inch balls; place 2-inches apart onto prepared baking sheets. Flatten with a glass dipped in sugar. Bake for 10 to 12 minutes or until lightly browned. Cool completely.

Makes 72 cookies.

These cookies are light as air and guaranteed to melt in your mouth.

2 egg whites

1/8 teaspoon salt

1/8 teaspoon cream of tartar

1/2 cup sugar

2 peppermint candy canes (one green and one red), crushed

Directions

Preheat oven to 225 degrees.

Line baking sheets with foil.

In a bowl, beat the egg whites until foamy. Add in the salt and cream of tartar; beat until soft peaks form. Beat in sugar, 1 tablespoon at a time, until stiff and glossy.

Spoon the meringue into a pastry bag or a resealable plastic bag. If using a plastic bag, cut a 1-inch hole in a corner.

Squeeze kisses of meringue onto ungreased baking sheets. Sprinkle half with red crushed candy canes and the other half with green crushed candy canes.

Bake for 1 1/2 to 2 hours or until dry, but not brown. Let cool. Remove from foil.

Makes 36 cookies.
