20-year-old Recipe for French Chocolate Silk Squares

I believe this recipe came from a 1989 edition of Woman's Day magazine but I can't be sure.  It was listed in the "Eating Healthy" section  because it has 1 1/2 tablespoons of oat bran in every square.  Each square also has 188 calories, 4 grams protein, 26 grams carbs, 9 grams fat, 0 mg cholesterol, and 130 mg sodium.  That is pretty good numbers for a dessert!  This is great for family meals, co-workers, holiday gift giving, bake sales, church potluck, etc.  Who doesn't love the idea of chocolate and healthy all in one?  Give these French Chocolate Silk Squares a try today and see just how well healthy and chocolate can be together!

IN CHOCOLATE CHIP COOKIES, SHORTENING DETERMINES FLAVOR AND SHAPE

5 Easy No-Bake Pie Crust Recipes

During the hot Summer months, I avoid heating up my kitchen with the oven. I prefer to make no-bake pie crusts, by using alternative ingredients.
You don't need to use a rolling pin, dough board, pastry blender or any of the traditional pie baking equipment. All you basically need are the ingredients, a large bowl, a measuring cup and of course, your pie pan.
These recipes are easy to make and best suited for refrigerated or frozen dessert-style pies. You will want to chill your pie crust for 1 hour (or until firm), before filling the pie shell with your pie filling.
Here are 5 of my favorite recipes.
Chocolate Cookie Crumb
24 chocolate sandwich cookies, crushed
1/4 c. butter, melted
Combine crushed cookie crumbs with melted butter until well mixed. Press mixture firmly into place into a 9" around pie pan.
Cornflake Crust
1 c. crushed cornflakes
1/4 c. sugar
6 tbsp. butter (melted)
Combine crushed cornflakes with sugar and butter, until well mixed. Spread the crumb mixture evenly and firmly into a 9" round pie pan.
Vanilla Wafer Crust
1 1/2 c. finely crushed vanilla wafers (about 39)
6 tbsp. butter, melted
Combine crushed wafers with butter, until well mixed. Spread the crumb mixture evenly and firmly into a 9" round pie pan.
Graham Cracker Crumb
1 c. crushed graham crackers
1/4 c. sugar
6 tbsp. butter (melted)
Combine crushed graham crackers with sugar and butter. Toss thoroughly to combine. Press mixture firmly into a 9" round pie pan.
Pretzel Crust
1 1/4 c. crushed pretzels (no salt)
1/4 c. sugar
6 tbsp. butter (melted)
Combine crushed pretzels with sugar and melted butter. Toss to thoroughly to combine. Press mixture firmly into a 9" round pie plate.

There are some recipes that are so typical of American baking, like the chocolate chip cookie. No American home is complete without a cookie jar full of these treats. There's a history to this recipe. It's said that this recipe, that is so very popular across the world today, was discovered by happenstance. A Mrs. Ruth Wakefield, who ran the Toll House Inn in Massachusetts, was at a loss as to what she could add to her cookie dough, as she was flat out of currants and raisins. The only thing handy was a Nestle chocolate bar, which she chopped into chunks and dropped into her butter cookie dough. And voila…the chocolate chip cookie was born. It became a huge hit with her customers and in 1939 Nestle bought the rights to her recipe and named their first batches of chocolate cookies 'Famous Toll House Cookies'. Another typically American baking recipe is the peanut butter cookie. It came into the American baking lexicon in the 1940s.

Angel food cake is another such recipe: it is so named because its airy, fluffy lightness was deemed food fit for the angels. But a large number of eggs went into this feather light cake. In fact Mrs. J.Chadwick in her 1953 "Home Cookery" book specified 32 egg yolks were needed for one single cake. Another famous cookbook Mrs. Horace Mann's 'Christianity in the Kitchen' wrote that 20 eggs were needed with around 3 hours of beating required!

There are so many vignettes behind each recipe, every home has their own special zealously guarded ingredient for their cakes, there are variations, different permutations and combinations, and elements added from other nations, elements assimilated sand Americanized. Use only the best ingredients, such as real butter and fresh eggs. If you are diet-conscious, add ground flax-seeds, nuts and dried fruit for nutrition. You can even substitute applesauce for part of the butter.

Make the dough agreeing to the instructions, but be specific not to mix it too long after adding the flour. Only mix until the flour is incorporated into the dough, otherwise your cookies will be tough.

Christmas Cookie Baking Recipes

The first beautiful dusting of fluffy white snow all the time puts me in the mood for baking Christmas cookies. At this time of year I tend to spend longer hours in the kitchen, baking up huge batches of cookies and candies as holiday music and movies play in the background. I love and have all the time loved the tastes and smells that come from a kitchen filled with love at Christmas time. Here are two of my recipes for original Christmas cookie favorites.

Gingerbread Cookies

Cookie Bake

6 cups flour

1 tablespoon baking powder

1 tablespoon ground ginger

1 teaspoon ground nutmeg

1 teaspoon ground cloves

1 teaspoon ground cinnamon

1 cup shortening, melted and cooled

1 cup molasses

1 cup packed brown sugar

1/2 cup water

1 egg

1 teaspoon vanilla extract

In a medium bowl, sift the dry ingredients together (flour, baking powder, ginger, nutmeg, cloves, cinnamon). In a large bowl, mix the shortening, molasses, brown sugar, water, egg, and vanilla. Mix well. Add in the dry ingredient aggregate slowly and mix well. Divide the dough into 3 pieces, make into pieces no bigger than 1 1/2 inch thick, wrap and refrigerate for 3 or more hours. Roll the dough (about 1/4 inch thick) out on a slightly floured outside and cut into shapes (smaller shapes work best with this dough). Bake in a 350 degree oven for 10 to 12 minutes. Frost with powdered sugar icing (milk or cream and powdered sugar). Word of warning on this recipe, it makes a very large batch so I hope you have a lot of house and friends to share this with.

Sugar Cookies (roll-out)

3 cups flour

1 cup sugar

1/2 teaspoon salt

1 1/2 teaspoons baking powder

1 cup soft butter

1 beaten egg

3 tablespoons cream

1 teaspoon vanilla

Combine softened butter and sugar until creamy. Add in egg, cream, and vanilla. Sift together flour, salt, and baking powder and add it to the liquid mixture. Chill for at least one hour. Roll out to about 1/4 inch thickness on a lightly floured outside and cut into your popular Christmas cookie shapes. Bake in a 350 degree oven for about 10 minutes. If desired, put red and green sprinkles on top of the cookies before putting them in the oven. If you would rather make it a house project, bake the cookies, allow to cool, and make a powdered sugar frosting (milk and powdered sugar). Divide up the frosting into distinct bowls and color it with food coloring. Sprinkles, chocolate chips, red hots, and mini M&Ms can help add fun to the frosting process.

When I was a little girl my favorite holiday treat was no-bake cookies. I remember the sweet aroma throughout the house and the delightful gems lined up across the kitchen counter on waxed paper.

Below is my Mother's method for no-bake cookies:

No Bake Cookies

Ingredients

2 c. Sugar
1/2 c. Milk
1/4 c. Cocoa (unsweetened)
1 stick margarine
1/2 c. Plane peanut butter
1 tsp. Vanilla
2 1/2 c. Quick oats

Directions

Combine sugar, milk, cocoa in small saucepan. Bring to boil for 1 minute.

Remove from heat, add remaining ingredients. Mix well.

Drop by tsp. Onto waxed paper. (May need to refrigerate)
