Free Christmas Cookie Recipes - Frosted Cranberry Drop Cookies

These cookies have a delightful burst of cranberry flavor.

1/2 cup butter, softened

Cookie Bake

1 cup sugar

3/4 cup packed brown sugar

1/4 cup milk

1 egg

2 tablespoons orange juice

3 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

2 1/2 cups fresh or frozen cranberries, chopped

1 cup walnuts, chopped

Cookie Frosting

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a bowl, cream together the butter, sugar and brown sugar. Add in the milk, egg and orange juice; mix well.

In another bowl, combine the flour, baking powder, salt and baking soda; add to the creamed mixture and mix well. Stir in cranberries and nuts.

Drop by tablespoonfuls 2-inches apart onto prepared baking sheets. Bake for 12 to 15 minutes or until golden brown. Let cool. Frost with Cookie Frosting.

Cookie Frosting

1/3 cup butter

2 cups confectioners' sugar

1 1/2 teaspoons vanilla extract

2 to 4 tablespoons hot water

Directions

In a saucepan, heat the butter over low heat until golden brown in color, about 5 minutes. Cool for 2 minutes. Transfer to a small bowl. Add sugar and vanilla. Beat in water, 1 tablespoon at a time, until the frosting reaches the desired consistency.

A true chocolate lovers cookie.

3/4 cup butter, cubed

4 squares unsweetened chocolate

2 cups sugar

4 eggs

1 1/2 cups all purpose flour

1/2 cup baking cocoa

2 teaspoons baking powder

1/2 teaspoon salt

2 cups semisweet chocolate chips, divided

2 teaspoons shortening

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a small saucepan, melt butter and unsweetened chocolate over low heat; cool. Transfer to a large mixing bowl.

Add in the sugar and eggs. Beat until smooth. Combine the flour, cocoa, baking powder and salt; gradually add to the chocolate mixture. Stir in 1 1/2 cups of chocolate chips. Cover and refrigerate for 2 hours or until the dough is easy to handle.

Drop by tablespoonfuls 2-inches apart onto prepared baking sheets. Bake for 7 to 9 minutes or until edges are set and the tops are slightly cracked. Let cool completely.

In a microwave safe bowl, heat the shortening and remaining chocolate chips on high for 1 minute or until the chips are melted; stir until smooth. Drizzle over cooled cookies. Let stand for 30 minutes or until the chocolate is set.

Makes 72 cookies.

A wonderful old-fashioned homemade cookie.

1/4 cup butter, softened

1 cup packed brown sugar

1 egg

1/2 cup quick cooking oats

1/2 cup apple butter

1 cup all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons milk

1/2 cup chopped nuts

1/2 cup raisins

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a small bowl, cream together the butter and sugar. Beat in the egg, oats and apple butter.

In another bowl, combine the flour, baking soda, baking powder and salt; gradually add to the creamed mixture, alternating with the milk. Beat until well blended.

Stir in the nuts and raisins. Cover and refrigerate until dough is easy to handle.

Drop by teaspoonfuls onto prepared baking sheets. Bake for 15 minutes or until set. Let cool.

Makes 30 cookies.
